Abstract

Innovations in side dishes are spurred by the desire of food service operators to sell their main courses and speed up business. Moreover, side dishes generate more earnings and appeal to vegetarian customers. Strategies for enhancing sales volume include adding side dishes that are guaranteed to whet customers' appetite to the cost of the main dish or to the fare itself. Menus should also be upgraded with a side dish specialty section that is sure to attract clients.
