Se estudiaron los efectos de la radiación gamma en la germinación de la variedad del ñame (D. alata) Florido cultivado en Puerto Rico y en los cambios químicos que tienen lugar en el tubérculo. La radiación con dosis de 7.5 Krad no afectó aprobablemente su composición y prolongó por 4 meses más el período de inactividad del ñame. Se sugiere una dosis de 7.5 Krad como la óptima para inhibir la germinación de los tubérculos del ñame de esta variedad. Esto hace posible que haya disponible ñame de buena calidad fuera de temporada. Las pérdidas en peso fueron relativamente bajas y el sabor del tubérculo muy aceptable.

Los tubérculos del ñame de la variedad Florido (D. alata) ya curados pueden almacenarse a una temperature de 16° C y una humedad relativa de 80 por ciento, prolongado así su período de inactividad por 4 meses adicionales. No se observaron cambios químicos significativos durante el tiempo de su almacenamiento. Tampoco se afectó el sabor de los tubérculos, los cuales perdieron muy poco peso. Tubérculos de ñame almacenados por 7 meses bajo condiciones controladas se sometieron a un tratamiento con el inhibidor de germinación CIPC aplicado en forma de niebla, prologándose su período de inactividad 20 días adicionales. Este inhibidor de germinación podría constituir un método bueno y práctico para prolongar el período de tránsito del ñame una vez se autorice su uso. También se estudiaron los efectos de la irradiación con rayos gamma en los tubérculos de ñame almacenados previamente por 7 meses bajo condiciones controladas. Las dosis de irradiación de 7.5 y 10 Krad evitan la germinación satisfactoriamente sin afectar el sabor. Los tratamientos con 7.5 y 10 Krad prolongaron por 60 días adicionales el período de inactividad de los tubérculos que se almacenaron bajo las condiciones ambientales prevalecientes, extendiendo así, el período de mercadeo del ñame.

Se ha estudiado la estabilidad de las grasas en las hojuelas de plátano usando el método de Schaal, en el cual se utiliza un horno con circulación de aire a 63.5° C. y tomando el contenido de peróxido en las grasas, como índice de rancidez. Para determinar la aceptación general de las hojuelas de plátano se hicieron pruebas organolépticas de cuatro grasas comerciales y de una mezcla de manteca de cerdo y aceite vegetal hidrogenado para freir las rebanadas de plátanos a una temperatura de 370° C. Los resultados de las determinaciones de estabilidad y de las pruebas organolépticas indican, que cuando se usa el aceite vegetal hidrogenado se obtiene un producto final de larga duración bajo almacenamiento, pero éste es de baja calidad, y adquiere un sabor y un color poco aceptables. Por otro lado, cuando se usa aceite de maíz y manteca de cerdo para freir, el producto final tiene un sabor muy agradable y un buen color, aunque en este caso las hojuelas suelen ponerse rancias más pronto. Hasta el presente, el mejor medio para freir las hojuelas de plátano es una mezcla de un 60 por ciento de aceite vegetal hidrogenado y un 40 por ciento de manteca de cerdo. El producto final posee la estabilidad del aceite vegetal hidrogenado y el buen sabor y color que le imparte la manteca de cerdo. El resultado de las pruebas cuando se usaron y evaluaron los antioxidantes para mejorar las cualidades de almacenamiento de las hojuelas, indica que los antioxidantes son muy efectivos cuando se añaden después de freir. Su aplicación surte mejores efectos cuando se usa una mezcla de antioxidantes y sal para condimentar las hojuelas de plátanos.

The effect of a number of processing variables on the quality of canned pigeonpeas was studied. Storage of the unshelled peas at 45° F. for 9 days had no appreciable effect on the quality of the canned product. The length of the blanching treatment was found to determine to a certain degree the color and turbidity of the brines. The longer the blanching treatment the clearer and less turbid are the brines. The rate of flow of make-up water to the blancher had no effect on the color and turbidity of the brine, provided the blanched peas were thoroughly washed and drained before canning. Holding-time before retorting and length of cooling of the cans had no effect on the quality of the canned product. Contact of pigeonpeas with iron, brass, or copper surfaces was found to result in brine discoloration. Excessive head-space was found to result in highly colored and turbid brines and peas discolored bluish. The type of can used, whether plain tin with C-enameled ends, or the fully enameled, had no appreciable effect on the quality of the canned product. When the pigeonpeas are blanched in calcium chloride solutions or calcium chloride is added to the can, the number of cracks in the canned peas can be reduced, but the peas become so tough as to render them inedible. The addition of 2 percent of sugar to the brine was found to have no effect on the flavor or the overall quality of canned pigeonpeas. Based on the results of the experiments reported, recommendations are given about the best process to use in canning high-quality pigeonpeas.

Se estudió la composición química de la batata de la variedad Cobre, así como su comportamiento durante su elaboración y la calidad del producto enlatado. Se comparó su comportamiento durante el enlatado y calidad del producto enlatado con los de batatas de la variedad U.P.R.3. La batata de la variedad Cobre contiene en su estado natural más humedad y un porcentaje de azúcares reductoras e invertidas totales más alto que la variedad U.P.R.3. Sin embargo, esta última es más rica en B caroteno. Ss pudo establecer que el rendimiento de la batata elaborada fue un 2.58 por ciento mayor en la variedad Cobre. No se pudo establecer diferencia alguna en la calidad del producto envasado en sirop de estas dos variedades.

Tests were made with five different demineralizing arrangements of ion-exchange resins in the purification of clarified sugarcane juices, but none provided juices superior in quality to those obtained from the reverse-cycle system. Feed juices of variable composition and high purities, and limited testing with the various mixed cycles preclude precise determination of the performance of these arrangements of exchangers, but ash, protein, color, and turbidity removals were insufficient to justify extensive testing. Purity increases obtained with most mixed cycles were found to equal or exceed that from the reverse cycle, indicating that more crystalline sugar would be available from the product juices, but the advantage of such additional sugar would be cancelled by the greater expense of installation and operation of four or five exchanger-beds, as compared with that for the three-bed reverse-cycle system.

The effect of age of tubers on the yield for canning of whole sweetpotatoes corresponding to U. S. Grade No.l, the chemical composition of the raw roots, and the quality of the canned product were studied for the Cobre and U.P.R.3 varieties of sweetpotatoes. The greatest overall yields and the maximum yields for canning purposes, were obtained in both varieties by harvesting 150 days after planting. It was observed that the age of tubers had no effect on the chemical composition of the raw root, its behavior during processing, or the quality of the canned product.

Studies were conducted to determine the feasibility of freezing pigeonpeas. The results obtained show that pigeonpeas can be successfully frozen for market. If the enzyme system is completely inactivated by proper blanching, no appreciable changes in flavor, texture, appearance, and intensity of off-flavor take place during storage at —10° F. for 2 years. Blanching in water at 195° F. for 5 minutes was found to be the best treatment to inactivate the enzyme system. Fully mature green peas with an alcohol-insoluble solid content of about 27 percent were found to be of better quality when frozen than more tender or overripe peas. A preliminary marketing test run in four supermarkets: two in the San Juan Metropolitan area, one in the city of Ponce, and one in the city of Mayagüez, indicated that frozen pigeonpeas offered to consumers in the off-season may be one of the best sellers among the frozen products.

Se ha estudiado la forma de deshidratar los ajíes dulces por medio de liofilización y del método convencional con aire caliente. Los ajíes dulces tienen una cutícula o piel superficial semi-impermeable que dificulta la evaporación del agua durante el proceso de la deshidratación. Para determinar la forma más adecuada de secar estos ajíes mediante los métodos ya mencionados, se usaron frutas enteras, partidas en mitades y enteras con la piel rayada. Los resultados obtenidos de estos estudios indican que cuando se usan ajíes con la piel rayada y cortados en mitades, el tiempo del secado se reduce grandemente y el producto final es de mejor calidad que cuando se usan ajíes enteros. El color, apariencia general, aroma y vida en almacén de los ajíes dulces liofilizados son superiores a los de los que se secan con aire caliente. Para liofilizar los ajíes dulces en un tiempo razonable, a la vez que se obtenga un producto de forma y color similar al producto fresco, debe usarse una temperatura inicial de 180° F. durante 2 horas, seguido esto de una temperatura de 150° F. durante el resto del periodo del secado. El tratamiento con calor para la inactivación de las enzimas no afecta la razón del secado, la calidad ni la vida en almacén del producto final, pero reduce grandemente el número de microbios. El deterioro de los ajíes dulces durante el secado y luego del producto deshidratado, se ha caracterizado por el desarrollo de sabores extraños y deterioro del color. El poder medir los sabores extraños en una fruta levemente picante es difícil. Los resultados obtenidos en este trabajo indican que puede usarse como índice de calidad el cambio de color del producto secado.

Investigations of the chemical requirements for regeneration of the first-anion and the cation-exchanger beds of the reverse-cycle system were undertaken in these studies, but no attempt was made to establish the requirements for the second-anion exchanger bed. A large dosage of NaOH to provide superior exchanger capacity was used for the highly basic anion resin in first position, and by recycling usable portions of the waste regenerant in a subsequent test, an average of 114 percent of the stoichiometric quantity of NaOH was consumed per test. No change in performance of the exchanger system was detected following adoption of such a regenerant recycling procedure. Efforts to obtain satisfactory regeneration of the weakly acid cation exchanger with H2SO4 were discouraging. The quantity of material which could be processed per test was less, the percentage removals of ash and protein were less, and the ash-percent-dry solids remaining in the product juices was 79-percent greater than when HCl was employed as regenerant. Juice purities following ion-exchange processing were found to have increased by approximately one-half as much with H2SO4 regeneration as with HC1. Examination of the product juices revealed that their potassiumion contents were much greater during H2SO4 regeneration tests than while HC1 was used. Apparently the large quantities of calcium and magnesium ions found in cane juices were not efficiently regenerated from the exchanger resin by H2SO4 , and that part which remained in the resin during subsequent juice deionization increased the leakage of potassium ions into the product juices. Although HC1 was much more expensive than H2SO4, the recycling of excess regenerant to reduce the quantity consumed to approximately 105 percent of the necessary stoichiometric requirement would make the use of this more costly acid economically attractive. Information was obtained in these tests which showed the importance of efficient backwashing of the highly basic first anion bed in order to eliminate significant quantities of Mg(OH)2, and organic materials precipitated on the resin particles during passage of juices through the bed. The effective backwashing obtained in the semipilot-plant column was not always attained in the smaller laboratory column and some insoluble materials remained following backwashing and regeneration.

Yam chips of good quality were prepared from the Farm Lisbon variety (D. alata). Samples were packed using three different types of storage containers, i.e., vacuum-packed tin cans, nitrocellulose-coated 195-yield, double cellophane bags, and polyvinylidene chloride-coated 210-yield, double cellophane bags. Yam chips packed in vacuum-packed tin cans had a longer shelf-life than those packed in the two other types of containers. Of the three types of frying media, lard proved best in terms of its effect on sensory qualities.

Se estudió el comportamiento de las variedades Rico y U.P.R. 3 durante el proceso de enlatado y se comparó la calidad del producto enlatado de ambas. La batata de la variedad Rico en su estado natural contiene más humedad y un porcentaje de azúcares reductoras e invertidas totales más alto que la variedad U.P.R. 3. Esta última, sin embargo, es más rica en caroteno B. Cuando se elaboraron estas dos variedades, se pudo establecer que la variedad Rico sufre una pérdida mayor en peso al pelarse con soda que la variedad U.P.R. 3. El rendimiento de batata elaborada por quintal de batata fresca fué 6 por ciento mayor en cuanto a la variedad U.P.R. 3.

Its possible biological control by means of the rust Phragmidium violaceuin (Schultz) Winter, is discussed.The introduction of this pathogenic agent, the infecting techniques and the preliminary results are given after one year., Se plantea el problema que significan las zarzas (Rubus constrictusLef. et M. yR. ulmifoliusSchott.), al compararse las condiciones ecológicas que han transformado estas especies europeas en la principal maleza de Chile, con las condiciones que presentan en su área de dispersión natural. Se expone la posibilidad, dándose los antecedentes respectivos, de un control biológico de esta planta, destacándose en este aspecto la royaPhragmidium violaceum(Schultz) Winter.Se indica la introducción de este agente patógeno, la metodología seguida y se dan los primeros resultados obtenidos después de un año de su introducción.

A method is presented to evaluate stereospecificity of hydrogen transfer by steroid dehydrogenases. It does not require homogeneous or even extensively purified enzyme but only that the preparation be free of endogenous substrates and capacity to spontaneously oxidize reduced cofactors. Using the method, human placental 17β-hydroxy steroid dehydrogenase, with 17α-3H-estradiol-17β as substrate, transfers the 17α-3H to the 4β-position of the nicotinamide ring of generated NADH.
