Introduction Canola oil with high unsaturated fatty acids and nutritional value is susceptible to oxidation due to lipid oxidation. Lipid oxidation leads to a reduction of nutritional quality, sensory and safety characteristics of the vegetable oils. To retard lipid oxidation, the synthetic antioxidants are usually used in the vegetable oils. By increasing the public concern about health problems of synthetic antioxidants, the use of natural antioxidants is increasing. Lavender (Lavandula officinalis) is an evergreen plant native to the Mediterranean. The presence of linalool, linalyl acetate, 1,8-cineole B-ocimene, terpinen-4-ol, and camphor in lavender essential oil, make it a good natural antioxidant which could use in food industry. Therefore, in the current research, it was aimed to investigate the antioxidant effect of lavender essential oil on the stability of canola oil. Material and Method The lavender was bought from Golestan province and dried in room temperature. The lavender essential oil was prepared by hydro distillation of flower heads. Then, the phenolic compounds were determined using GC-MASS. The Total phenolic content (TPC), flavonoid content (TFC), and antioxidant activity (FRAP and DPPH) of lavender essential oil were evaluated. Then, lavender essential oil in concentrations of 200, 400, 600, 800, and 1000 mg/kg was added to the crude canola oil compared to canola oils without antioxidants and synthetic antioxidant TBHQ (100 and 200 mg/kg). Then, the samples were kept at 60 to 70 oC for 12 days. The analysis was done in an interval of 24 h for 12 days. Lipid oxidation of samples was determined by peroxide value, p-anisidine value, TOTOX value, and thiobarbituric acid each 24 h. analyses of Data were done by one-way analysis of variance (ANOVA) using SPSS software and the means were compared by the Tukey multiple range test. Result and Discussion According to the GC-MS analysis, 1, 8-cineole (59.45 %), linalool acetate (32.48 %), linalool (6.31 %), and limonene (1.06 %) were identified as the major constituent of lavender essential oil. Also, Total phenol, flavonoid, FRAP and DPPH (IC50) contents of lavender essential oil were 71.55 mg GAE/g, 82.66 mg of rutin/100 g, 12.63 mmol H2SO4, and 55.88 mg/ml, respectively. According to the results, all lipid oxidation indexes were increased after twelve days of storage. In general, lavender essential oil was effective in retarding the oxidation of canola oil at a temperature of 70 oC. Also, the concentration of 1000 mg/kg of the essential oil had antioxidant activities similar to the TBHQ in 100 mg/kg concentration. Conclusion It was showed that lavender essential oil, as a natural antioxidant, has the ability to react with the radicals resulting from the oxidation of lipids and causes the interruption of oxidation chain reactions and increases the time and decreases the rate of oxidation. As observed, the oxidation of canola oil in all samples, especially the samples without antioxidants or antioxidants to a lesser extent, increased significantly with increasing storage time. In general, lavender essential oil at L1000 concentration and also in some oxidation indices of lavender essential oil at L800 concentration has an effective role in preventing the oxidation of canola oils like synthetic antioxidant TBHQ.

Background: Estimating the prevalence of food insecurity among vulnerable sub-groups, especially pregnant women, is significant. This study aimed to estimate the pooled prevalence of food insecurity among Iranian pregnant women and to determine its related factors. Materials and Methods: This study constitutes a systematic review and meta-analysis of cross-sectional studies involving pregnant women, published between January 2000 and September 2022, in English and Persian on seven databases. Finally, 14 studies were analyzed and synthesized, with the results presented in the form of forest plots. Heterogeneity was investigated using the I2 index and the meta-regression to evaluate variables suspected of causing heterogeneity. Statistical analysis and synthesis were performed using Stata-16. Results: The pooled prevalence of food insecurity among Iranian pregnant women was 45% (95% confidence interval: 37–54%). In a multi-variable meta-regression model, p values were significant for the year of data collection and the type of the questionnaire. The adjusted I2 and R2 indices were estimated at 84.47 and 51.46%, respectively. The prevalence of food insecurity among Iranian pregnant women has been estimated at half a million. Conclusions: Given the high prevalence of food insecurity among pregnant women in Iran, we propose the inclusion of food insecurity screening for this vulnerable demographic within the primary healthcare package. Additionally, we advocate for the allocation of food subsidies to pregnant women confronting food insecurity.

Background: With the expansion of the restaurant industry and the increased consumption of fast food, the hygiene of food ingredients and the quality of oils used in the frying process have gained significant importance. This article explores the levels of peroxides and polar compounds in edible oils used in fast food establishments in Noorabad city. Methods: Twenty-seven units were selected using the Cochran formula. Sampling from the selected units was conducted in two stages periodically on non-holiday days. The collected samples were transferred to the laboratory and analyzed according to the Iranian Industrial Standards and Research Institute Standard 4179. The collected data were analyzed using SPSS software, ANOVA, and post-hoc tests. Results: In the first sampling stage, 40.7% of the samples, and in the second stage, 29.6% exceeded the permissible limits for polar compounds. Significant correlations were found between the production of polar compounds, temperature, time, and the type of container used (p < 0.05). The amount of polar compounds increased with the use of oil for more than 20 minutes, with cast iron containers having the most significant impact compared to copper and aluminum containers. Additionally, significant differences were observed in peroxide production based on the type of container, time, and brand used (p < 0.05), with cast iron having the least impact Conclusion: Based on the obtained results, it can be concluded that the duration of oil usage, the type of container, and the brand used significantly affect the quality of oils used in fast food establishments. This information can contribute to improving processes and hygiene standards in these units, ultimately ensuring consumer health.

Introduction: The current survey investigated the alleviating effect of dietary clove (Syzygium aromaticum) essential oil (CEO) in comparison with vitamin C (VC), against the adverse effects of Pb on growth performance, serum oxidative indices, and lipid profile in Japanese quails (Coturnix japonica), following oral administration. Methods: 480 one-day-old quails were randomly segregated into 8 groups, which fed with the following diets, via 35 days: basal diet (negative control), basal diet + VC (500 mg/kg), basal diet + CEO (450 mg/kg), basal diet + CEO (100 mg/kg), basal diet + VC (500 mg/kg) + Pb (100 mg/l), basal diet + CEO (450 mg/kg) + Pb (100 mg/l), basal diet + CEO (100 mg/kg) + Pb (100 mg/l), and basal diet + Pb (100 mg/l) (positive control). The data were analyzed using a one-way analysis of variance and Duncan’s post hoc test. Results: Quails exposed to Pb and treated with CEO had reduced oxidative stress as evidenced by lower concentrations of TBARS and CP, higher activities of SOD, GPx, and CAT, and more improved lipid profile, compared to positive control. Moreover, the alleviating effects of CEO were dose-dependent. Conclusion: The CEO (450 mg/kg) was potentially as effective as or even more potent than VC (500 mg/kg) in alleviating the adverse effects of Pb.

IntroductionMetabolic risk factors (MRFs) predispose populations to a variety of chronic diseases with a huge burden globally. With the increasing burden of these risk factors in Iran, in this study, we aimed to report the estimated burden attributed to MRFs at national and subnational scales in Iran, from 1990 to 2019.MethodsBased on the comparative risk assessment method of the Global Burden of Disease (GBD) Study 2019, data of deaths and disability-adjusted life years (DALYs) attributable to four top MRFs in Iran including high systolic blood pressure (SBP), high fasting plasma glucose (FPG), high body mass index (BMI), and high low-density lipoprotein (LDL) for the 1990–2019 period, were extracted. The socio-demographic index (SDI) was used to report the data based on the corresponding socio-economic stratifications. The results were reported in national and subnational 31 provinces of Iran to discover disparities regarding the attributable burden to MRFs. Furthermore, we reported the causes of diseases to which the attributable burden to MRFs was related.ResultsOverall, the age-standardized high LDL, high SBP, high BMI, and high FPG-attributed death rate changed by −45.1, −35.6, +2.8, and +19.9% from 1990 to 2019, respectively. High SBP was the leading risk factor regarding attributed age-standardized death rates reaching 157.8 (95% uncertainty interval: 135.3–179.1) and DALY rates reaching 2973.4 (2652.2–3280.2) per 100,000 person-years, in 2019. All rates increased with aging, and men had higher rates except for the +70 years age group. At the subnational level, provinces in the middle SDI quintile had the highest death and DALY rates regarding all four MRFs. Total deaths, DALYs, YLLs and YLDs number by the causes of diseases linked to MRFs increased over the study period. Cardiovascular diseases, diabetes mellitus, and kidney diseases were the main causes of burden of disease attributable to MRFs.ConclusionHerein, we found divergent patterns regarding the burden of MRFs as well as disparities in different regions, sex, and age groups for each risk factor and related causes. This could provide policymakers with a clearer vision toward more appropriate decision-making and resource allocation to prevent the burden of MRFs in Iran.

Introduction: Fatty liver is the most common chronic liver disease, and finding the appropriate method for detecting the problem is necessary. The current study aimed to quantity the liver steatosis using computed tomography (CT) and ultrasound images, as well as alanine aminotransferase (ALT) blood test. Materials and methods: In this work, 163 non-alcoholic fatty liver disease (NAFLD) patients implemented CT and ultrasound images on their abdomen regions. The liver and spleen density were calculated using CT images (as the standard method), and then the patients were divided into mild, and moderate to severe groups. During the sonography, M-value histogram of the liver and right kidney was drawn and their ratio (liver/kidney) was considered as hepatorenal index (HRI). Mann-Whitney test were used to evaluate the relationships between HRI and ALT values. Results: The mean and standard deviation of the liver density in CT scans were obtained 51±4 HU. The HRI had better performance (area under the curve, AUC: 0.94) compared to the ALT (AUC: 0.88) in determining of liver steatosis. Introduction: In recent years, the contamination of food with heavy metals has received much attention. Plants can absorb metal pollutants through contaminated water, soil, and air. Materials and Methods: In the current study, accumulation of minerals in three types of soybeans was investigated by wet and dry digestion methods using ICP-OES technique. Thereafter, the metals' health risk was assessed by estimated daily intake, toxic hazard quotient (THQ), and hazard index (HI) values. Results: According to the results, the concentrations of Cr, Se, Ca, Fe, Mo, Mn, and Mg in soybean seeds were 0.034-170.88 mg/kg, 0.21-243.79 mg//kg, 2.50-33.37 mg/kg, 0.05-0.86 mg/kg, 0.071-203.57 mg/kg, 0-0.47 mg/kg, and 2.69-19.31 mg/kg, respectively. The ashing method had a better performance in determining Ca, Fe, Mo, Mn, and Mg concentrations than the wet digestion method. The THQ rates were below 1 for the three varieties of each mineral element, but the HI values of variety 2 and variety 3 were higher than 1 in both methods. Conclusion: Furthermore, continuous monitoring of the soybeans' mineral and heavy metal contents seems necessary.

IEEE 802.11 WLAN utilizes a distributed function at its MAC layer, namely, DCF to access the wireless medium. Due to its distributed nature, DCF is able to guarantee working stability in a wireless medium while maintaining the assembling and maintenance cost in a low level. However, DCF is inefficient in dealing with real-time traffics due to its incapability on providing QoS. IEEE 802.11e was introduced as a supplementary standard to cope with this problem. This standard introduces an Enhanced Distributed Coordination Function (EDCF) that works based on diff-Serve model and can serve multiple classes of traffics (by using different prioritizations schemes). With the emergence of new time-sensitive applications, EDCF has proved to be yet inefficient in dealing with these kinds of traffics because it could not provide network with well-differentiated QoS. In this study, we propose a novel prioritization scheme to improve QoS level in IEEE 802.11e network. In this scheme, we replace Uniform PDF with Gamma PDF, which has salient differentiating properties. We investigate the suitability and superiority of this scheme on furnishing network with well-differentiated QoS using probabilistic analysis. We strengthen our claims by extensive simulation runs.
