Thermal and rheological properties of methylcellulose (MC) and hydroxypropyl methylcellulose (HPMC) hydrogels with chitosan (CHI) were investigated to verify the potential application of these blends as structured systems for oil transport (emulgel, oleogels, and bigels). FTIR confirmed hydrophobic interactions of cellulosic polymers with chitosan. In the temperature sweep, the thermosensitive hydrogels showed their reduced gel point compared to the original polymers. The gelation temperature was reduced from 66.9 °C for pure HPMC to 43.6 °C and 43.6 °C (MC pure polymer) to 39.3 °C when 30% CHI was added for both cases. The addition of 20 and 30% chitosan is enough to modify the extension of the gelation temperature of these polymers. These results indicate that the addition of chitosan enables MC and HPMC to form gels at lower temperatures, which could allow milder thermal conditions to be applied in processing oil carrier systems.

The aim of this work was produce and characterize solid lipid microparticles (SLMs) with different proportions of fully hydrogenated palm oil (FHPO) and palm oil (PO) as wall material (WM) to encapsulate ascorbic acid (AA), using the spray chilling technique. The microparticles were evaluated for surface morphology (SEM), size distribution and mean diameter, polymorphism, encapsulation efficiency, thermal behavior, DSC, and for release profile. The mean particle diameter ranged from 97.80 to 181.29 μm and the micrographs revealed spherical particles and rough surfaces. The encapsulation efficiency ranged from 80.22 to 93.51% and it was influenced by increases in the concentration of PO in each formulation and by the particle size. All the lipid microparticles presented high thermal resistance and had crystalline behavior β′, proving that after atomization the particles preserved the original polymorphic forms of their constituent materials. Moreover, SLMs gradually released ascorbic acid in aqueous medium, following Higuchi kinetic.

Entretanto esse composto é oxidativo e de natureza reativa, podendo causar problemas de degradação e instabilidade em sistemas alimentares que os contêm. As limitações do AA podem ser minimizadas a partir da incorporação desse ativo em micropartículas lipídicas (MPLs), que são capazes de promover progressivamente a liberação do composto para o meio aplicado. Com base nesse contexto, o objetivo deste trabalho foi produzir e caracterizar MPLs constituídas de óleo de palma totalmente hidrogenado (PATH) e óleo de palma (PA) para encapsular o AA, mediante a técnica de spray chilling. As proporções de PATH:PA foram variadas em diferentes formulações: F1 (100:0), F2 (90:10), F3 (80:20), F4 (70:30) e F5 (60:40), respectivamente, enquanto que a relação entre o material de parede (MP) e o material recheio (MR) foi fixada em 80:20, respectivamente. O PATH e o PA foram quimicamente caracterizados e as MPLs com e sem o AA obtidas por spray chilling foram avaliadas quanto ao comportamento térmico via DSC, distribuição de tamanho e diâmetro médio das partículas e morfologia de superficie por MEV. Os diâmetros médios das MPLs com o AA variaram de 97,80 a 181,29 µm e foram influenciados pelo aumento na proporção de PA na formulação e pela adição do ativo em forma de cristal, enquanto as MPLs sem o ativo apresentaram menores valores de diâmetro. As imagens obtidas por MEV das MPLs com AA revelaram partículas esféricas, superfícies rugosas e com aglomerados. Adicionalmente, foram realizadas análises de microscopia por hot-stage, polimorfismo e eficiência de encapsulação total (EET) e eficiência de encapsulação efetiva (EEE) nas MPLs com AA. A EEE das MPLs variou de 80,22 a 93,51 %, sendo novamente influenciada pelo incremento de PA em cada formulação e pelo tamanho de partícula. Para o estudo da estabilidade por ciclização térmica foram avaliadas três formulações de MPLs com AA, que foram armazenadas em ciclos de 48 hs nas temperaturas de 30 ºC e 45 ºC, alternadamente. Ao final do processo de armazenamento as MPLs apresentaram ausência de alterações em suas propriedades térmicas, predominância do polimorfo ?¿ e valores de retenção de AA satisfatórios, variando de 74,25 a 83,07%. É possível concluir que as MPLs com maiores proporções de PA e de maiores diâmetros foram capazes incorporar adequadamente ativo e isso levou a elevados valores de eficiência de encapsulação Abstract: Ascorbic acid (AA) is widely used in food industries as active because of its antioxidant properties. The FHPO and PO were chemically characterized and LMPs with and without AA obtained by spray chilling were evaluated for thermal behavior via DSC, size distribution and mean particle diameter and surface morphology by MEV.The mean diameters ranged from 97,80 to 181,29 ?m and were influenced by the increase in the ratio of PO in the formulation and by the addition of the active crystal, since particles without active showed smaller values of diameter. The images of LMPs with AA obtained by MEV revealed spherical particles, rough surface and with agglomerates. In addition, analyzes of hot-stage microscopy, polymorphism and total encapsulation efficiency (TEE) and effective encapsulation efficiency (EEE) were performed in LMPs with AA. The EEE of the LMPs varied from 80.22 to 93.51%, being again influenced by the increase of PO in each formulation and by the particle size. For the thermal cyclization stability study, three formulations of LMPs with AA were evaluated, which were stored in cycles of 48h at temperatures of 30 °C and 45 °C, alternately. At the end of the storage process, the LMPs showed no changes in their thermal properties, predominance of the polymorph ?¿ and satisfactory AA retention values ranging from 74,25 to 83,07%. O presente trabalho teve como objetivo desenvolver uma formulação de pão francês com 50% de redução no teor de sódio (Na+), avalição sensorial do produto sem veículo e com veículo (margarina) e a avaliação estatística dos resultados. As análises físico-químicas seguiram a metodologia estabelecida pelo Instituto Adolfo Lutz (2008). Já para a análise sensorial foi utilizado um método afetivo, utilizando 79 provadores para a primeira avaliação e para a segunda 95 provadores, tendo como referência mínima de aceitação o índice de 70%. Para os resultados de composição centesimal o produto atende a especificação legal. Na avaliação dos parâmetros sensoriais percebe-se que os índices de aceitação dos produtos sofrem interferência quando são oferecidos com veículo (margarina). Assim com base nos resultados obtidos neste projeto mostram que é possível desenvolver um produto com 50% de redução de sódio, dentro do padrão legal estabelecido.
