Summary: The utilisation of in vitro digestive simulation models holds significant importance in the development, quality control, and safety evaluation of functional foods. This review presents an overview of the classification, design, and construction methods of in vitro digestive models while summarising the emerging trends towards miniaturisation and intelligence. Miniaturisation technology enhances the ability of these models to simulate physiological processes within the human digestive system more accurately, thereby improving experiment repeatability and controllability.
