Abstract

The new multifunctional additive created in kombina-tsii of squirrels-polisaharid is developed. Results of morphological researches and technological schemes of manufacture meat produk with application of a multifunctional additive, and also a chemical compound and органолептические and physical and chemical indicators polufab-rikatov are presented.
