Butter is popularly known in dairy products and consists of large amounts of milk fat (at least 80%). The risk of oxidation increases by a higher content of unsaturated fatty acids in milk fat and adversely affects the quality and safety of the product. Primary oxidation products are hydroperoxides, which can decompose to form lower molecular weight compounds such as alcohols, aldehydes, free fatty acids (FFA), and ketones. This process may give rise to butter rancidity. In this study, 20 samples of traditional butter, including 10 samples of cow butter and 10 samples of sheep butter, were purchased from different traditional dairy product supermarkets in southern Tehran and were analyzed to evaluate the amount of fat oxidation.The peroxide levels in all samples of traditional butter were within the permissible limit established by Iran's national standard. According to the results, it was found that the amount of peroxide in cow butter (1.08 ± 0.12 mEq/kg) is higher than in sheep butter (p=0.037). It may be related to the temperature and time of storage. Therefore, strategies such as diminishing temperatures, maintaining products in a dark environment, removing oxygen by creating a vacuum in the packaging, and using antioxidant compounds can prevent butter oxidation.

The present study aimed to assess the potentially toxic elements (PTEs), including copper (Cu), zinc (Zn), arsenic (As), lead (Pb), and mercury (Hg) in refined, rock, and sea salt samples collected (n=60) from Tehran’s local market by the aid of an inductively coupled plasma-mass spectrometry (ICP-MS). Besides, the carcinogenic and non-carcinogenic risks for children and adults were estimated with the aid of the Monte Carlo simulation (MCS) method. The rank order of PTEs in refined salt was Pb (13.378 μg/g) > Cu (6.448 μg/g) > Zn (0.363 μg/g) > As (0.184 μg/g) > Hg (0.049 μg/g); in sea salt was Pb (22.972 μg/g) > Cu (3.963 μg/g) > Zn (0.986 μg/g) > As (0.387 μg/g) > Hg (0.224 μg/g); and in rock salt was Cu (31.622 μg/g) > Pb (22.527 μg/g) > Zn (0.638 μg/g) > As (0.235 μg/g) > Hg (0.095 μg/g). It was concluded that the average concentration of some of the investigated PTEs was higher than the national standard limits and Codex’s guidelines. A significant non-carcinogenic risk (TTHQ > 1), except for adult consumers, was noted based on the health risk assessment who consume refined salt. All consumers were also at the threshold carcinogenic risk of As (between 10−4 and 10−6). Given the considerable health risks due to consumption (refined, rock, and sea salt), approaching effective monitoring plans to control the PTEs concentrations in salt distributed in Tehran are recommended.

Aims: The aim of this study was to investigate the toxic effect of Echium amoenum plants on the liver and kidney of the animal model. Background: Echium amoenum is one of the medicinal plants containing pyrrolizidine alkaloids with several properties which has widely consumed among different communities. Objective: The toxic effects of Echium amoenum on the liver and kidney were investigated in this study. Methods: Sixty mice were kept for 28 days under the appropriate laboratory conditions. Echium amoenum extract (25, 12.5, 50 mg / kg, ip.) was administered for 28 days. At the end of the experiment, blood samples were drawn and liver and kidneys were removed for evaluating hepatotoxicity and nephrotoxicity of extract. Additionally, experiments were conducted to assay the enzymatic and oxidative activities. Results: There was no significant difference in the levels of copper ion in the liver and kidneys among all groups. There was a significant difference in the levels of lipid peroxidation in the liver of treated groups versus the control group. The significant difference was not observed in the levels of glutathione of the liver of all groups. However, the levels of glutathione of the kidney significantly decreased in the treated groups versus the control group. There was no significant difference in the liver enzymes, including ALP, SGOT, and SGPT, between all groups. This indicates that damage increases with enhancing the time and concentrations of the extract. Biochemical analysis showed the creatinine and urea levels did not change in the treated groups versus the control group. Conclusion: According to the present findings, it is suggested that Echium amoenum causes hepatotoxicity and nephrotoxicity effects in dose and time-dependent manner.

The aim of study was evaluate of the concentration and health risk of nitrosamines in 150 meat products samples by using gas chromatography coupled with mass spectrometry (GC/MS), with the chemometric approach. Among the identified nitrosamines, the levels of N-nitrosopyrrolidine (NPYR), N-nitrosopiperidine (NPIP), and total nitrosamines in meat sausages samples were significantly higher than chicken sausages (p 1E-4) recommended by United States Environmental Protection Agency for Iranian population.

The current study aims to investigate the levels of the toxic metal in agricultural products (legumes, wheat, and potato) collected in Markazi province, Iran, and human health risk by using inductively coupled plasma - optical emission spectrometry (ICP-OES). The levels of arsenic (As) and cadmium (Cd) in all samples were lower than the limit of detection (LOD), while the level of Cd in potato samples was lower than the maximum permisible level (MPL) of the European commission (EC). The non-carcinogenic and carcinogenic risk assessment by direct ingestion of agricultural products was calculated using the United States Environmental Protection Agency (USEPA) method. The highest mean of toxic metals was observed for lead (Pb) in legume samples (562.17 μg kg− 1). Mercury (Hg) and Pb levels in all samples were higher than LOD, while Pb level in wheat samples were lower than of EC. The rank order of Hg and Pb levels in all samples based on target hazard quotient (THQ) value was wheat> potato>legume. The THQ index of Hg and Pb by the deterministic method in wheat was 1.37 and 0.454; in potato 0.139 and 0.104; in legume 0.092 and 0.41, respectively. The carcinogenic risk index was at an acceptable range. The high hazard index values were estimated and the THQ index for Hg in wheat suggests a non-negligible health risk.

This study was conducted to determine the polycyclic aromatic hydrocarbons (PAHs) levels and health risk of yogurt and butter samples collected from Tehran using MSPE/GC‐MS (magnetic solid‐phase extraction/gas chromatography‐mass spectrometry). The results revealed that the limit of detection (LOD) and limit of quantification (LOQ) were ranged from 0.040 to 0.060 and 0.121 to 0.181 μg/kg, respectively; with recoveries ranged from 86.1% to 100.3%. The highest mean of total PAHs was higher in butter (6.87 ± 1.21 μg/kg) than in yogurt (3.82 ± 0.54 μg/kg). The level of benzo (a)pyrene in all samples was lower than of standard levels of the European Union (EU). The highest value of all PAHs in samples was recorded in the winter season and also in the expiration date. The percentile 95% of the total hazard quotient (THQ) due to the consumption of yogurt and butter recorded 1.33E‐02 and 3.69E‐04 in adults and 6.12E‐02 and 1.75E‐03 in children, respectively. The percentile of 95% incremental lifetime of cancer risk (ILCR) due to the ingestion of yogurt and butter recorded 1.17E‐06 and 2.02E‐08 for adults and 5.51E‐06 and 9.46E‐08 for children, respectively. The rank order of 7 PAHs in adult and children based on P95% Hazard Quotient (HQ) in all samples was benzo(a)anthracene (BaA) > pyrene (P) > fluorene (F) > fluoranthene (Fl) > acenaphthylene (Ace) > anthracene (A) > naphthalene (NA). The concentration of potentially toxic elements (PTEs) in vegetable oils using inductively coupled plasma-optical emission spectrometry (ICP-OES) was measured. Probabilistic non-carcinogenic risk in consumers was estimated using the target hazard quotient (THQ) and total target hazard quotient (TTHQ) by Monte Carlo simulation (MCS) method. The highest content of PTEs was found in blend oil for As (0.39 ± 0.07 mg/L), in cold-pressed rapeseed oil for Cd and Cu (0.07 ± 0 and 0.40 ± 0.06 mg/L) respectively, in cold-pressed sunflower oil for Fe (0.15 ± 0.10 mg/L), in refined sesame oil for Ni and Pb (0.44 ± 0.07 and 0.65 ± 0.07 mg/L, respectively), and in cold-pressed sunflower and rapeseed oils for Zn (0.19 ± 0.04 mg/L). THQ in adults and children due to individual vegetable oils (cold-pressed and refined vegetable oil) was lower than 1 value. TTHQ in adults and children due to consumption of cold-pressed vegetable oils was 0.05 and 0.26, and also refined vegetable oil was 0.51 and 0.33, respectively. TTHQ due to consumption of both types of oils was less than 1; therefore, the population is not at risk of non-carcinogenicity.

This study investigated the effect of nano-chitosan coating containing free/nano forms of Heracleum persicum L. essential oil (HPEO) on microbial, chemical and sensory properties of rainbow trout (Oncorhynchus mykiss) at 4 °C during storage. In this study, nanoliposomes were prepared using different soy lecithin/cholesterol ratios (30:30, 40:20, 50:10 and 60:0) and sonication-hydration techniques with sizes of 78.70-123 nm. Liposome with a ratio of 50:10 had the greatest EE%. The zeta potantial was between -5.62 ± 0.28 to -3.71 ± 0.31 mV. The index of polydispersity and encapsulation efficiency (EE) were 0.452-0.481 and 51.93-68.13 %, respectively. Based on the results of microbiological and chemical analyses, samples treated with with nanochitosan/nano essential oil (NCS-NEO) had a better effect at the end of the study than other samples (NCS-EO, NCS and control). For NCS-NEO treatment at the end of storage time, analysis the value of total volatile basic nitrogen (TVB-N), pH, thiobarbituric acid reactive substances (TBARs) and peroxide value (PV) were, 27.95 (mg/100 g), 6.9, 0.37 (mEq/kg), 5.13 (mg MDA/kg), respectively, and the total pseudomonads count (TPC), total viable counts (TVC) and lactic acid bacteria (LAB) were, 8, 6.8, and 6.5 CFU/g, respectively. Further, the NCS-NEO treatment (at the end of study) achieved the highest sensory characteristics. HPEO encapsulation decreases diffusion rates, so improving activity of antioxidant and antimicrobial, and characteristics of sensory. This study suggested that coating nano forms of HPEO with NCS could be used to enhance shelf life of rainbow trout fish.

The objective of the present research was to investigate the level of 16 PAHs in fruit juice samples (orange, apple, peach, pineapple, and mango) with three different packages (PET bottle, Tetra Pak and Canned packaging) by using MSPE/GC–MS (magnetic solid-phase extraction and gas chromatography-mass spectrometry) method. Our outcomes showed the mean of total PAHs and PAH4 (in all samples) were 7.67 ± 3.19 and 0.37 ± 0.16 µg/L, respectively. The mean of BaP in samples was )0.06 ± 0.03 µg/L( lower than the standard level of US-EPA (0.2 µg/L in drinking water). Also, our results showed that pineapple juice had a maximum mean of total PAHs of 12.42 ± 4.84 µg/L and mango juice had a minimum mean of total PAHs of 5.17 ± 1.24 µg/L. Additionally, canned packaging had a maximum average total PAH of 10.62 ± 5.22 µg/L and PET bottles had a minimum average total PAH of 5.25 03 2.03 µg/L. A heat map approach was also used to cluster samples. The Monte Carlo outcomes indicated that the estimated daily intake (EDI) rank order was Na > B(g)P > Ch > I(cd)P > B(b)F > Ph > B(k)F > F > Ace > Fl > B(a)P > B(a)A > P > A. The Monte Carlo Simulation (MCS) results showed the incremental lifetime cancer risk (ILCR) at the 95th percentiles for adults and children was 4.91E-7 and 9.12E-7, respectively, which indicated no risk (− 6).

The technology of genetically modified (GM) can overwhelm agricultural and nutritional difficulties in the food industry, food safety and security by increasing resistance to pests and herbicides, drought tolerance, rapid ripening and ultimately increasing yield and food quality. However, in the last few decades, significant dangers of GM foods to humans, animals, and the environment have been identified. Nevertheless, there is insufficient scientific evidence to prove the harmful effects of these foods on human and animal health. In this article, several advantages and disadvantages of this technology are reviewed. Therefore, it is necessary to perform all the requested risk assessments before releasing any GM product and next post-release checking to track probable gene flow and limit any possible contamination of the food chain catastrophe. Therefore, the safe use of this technology, in compliance with all protocols of environmental health and safety assessment at the national and international levels are demanded.

Ion mobility spectrometry (IMS) is an analytical separation and diagnostic technique that is simple and sensitive and a rapid response and low-priced technique for detecting trace levels of chemical compounds in different matrices. Chemical agents and environmental contaminants are successfully detected by IMS and have been recently considered to employ in food safety. In addition, IMS uses stand-alone or coupled analytical diagnostic tools with chromatographic and spectroscopic methods. Scientific publications show that IMS has been applied 21% in the pharmaceutical industry, 9% in environmental studies and 13% in quality control and food safety. Nevertheless, applications of IMS in food safety and quality analysis have not been adequately explored. This review presents the IMS-related analysis and focuses on the application of IMS in food safety and quality. This review presents the important topics including detection of traces of chemicals, rate of food spoilage and freshness, food adulteration and authenticity as well as natural toxins, pesticides, herbicides, fungicides, veterinary, and growth promoter drug residues. Further, persistent organic pollutants (POPs), acrylamide, polycyclic aromatic hydrocarbon (PAH), biogenic amines, nitrosamine, furfural, phenolic compounds, heavy metals, food packaging materials, melamine, and food additives were also examined for the first time. Therefore, it is logical to predict that the application of the IMS technique in food safety, food quality, and contaminant analysis will be impressively increased in the future. The aim of current study was to evaluate the acrylamide level in chicken, meat and shrimp nugget samples cooked in both traditional and industrial methods using “Quick, Easy, Cheap, Effective, Rugged, and Safe” QuEChERS extraction and gas chromatography-flame-ionization detection (GC-FID). Results revealed the traditional frying method has significant effect on the increase of acrylamide compared to industrial frying method and it was also found that the different cooking temperatures and time have significant effect on increase of acrylamide formation (p meat nugget (1.36E-3) > shrimp nugget (1.43E-4) and for adults was chicken nugget (3.49E-4) > meat nugget (1.35E-4) > shrimp nugget (1.38E-5). The health risk of acrylamide for adults and children, was considerably lower than the safe risk limits (HQ >1 and CR > 1E-4) for Iranian population.

In this study, the effects of different concentrations of thymol and astaxanthin on control of Clostridium perfringenes and also microbial, chemical, and organoleptic properties of common and probiotic beef cooked sausages containing two levels of nitrite during storage at refrigerated condition during 45 days were evaluated. Based on findings, control group had significantly higher total volatile base nitrogen (TVB‐N) than nitrite‐, thymol‐, and astaxanthin‐treated samples. At the end of the storage time in control, thiobarbituric acid reactive substances (TBARS) value reached 1.96 mg/kg, while the values for treated samples remained lower than 1.63 mg/kg. The aim of the current study was to evaluate the probabilistic health risk and the concentration of 16 polycyclic aromatic hydrocarbons (PAHs) in commercial tea and coffee samples. For determining the mentioned contaminants in sixty-four samples, a reliable and sensitive technique was validated and developed. The technique is established on magnetic solid-phase extraction and gas chromatography-mass spectrometry analysis (MSPE/GC-MS). The maximum mean of ƩPAHs in coffee samples was 13.75 ± 2.90 μg kg-1, while the minimum mean ƩPAHs in tea samples was 4.77 ± 1.01 μg kg-1. The mean concentration of benzo(a)pyrene (BaP) in samples ranged from 0.64 to 2.07 μg kg-1 which was lower than that of standard levels (10 μg kg-1) established by the European Union (EU). The Monte Carlo simulation results showed that the actual target hazard quotient (THQ) for the adult and children was equal to 1.63E-04 and 1.67E-04, respectively; hence, non-carcinogenic health risk for consumers is negligible. The result of actual incremental lifetime cancer risk (ILCR) was lower than the limits of safe risk (1E-4), indicating no notable possibility of cancer risk due to the digestion of tea and coffee for children and adults. Therefore, it can be concluded that the amount of contamination of popular commercial coffee and tea available in the Iranian market with PAHs is often similar to that found in other countries and was lower than the standard of EU. Thus, the processing conditions of these products must be controlled to prevent the formation of PAHs due to the suspicion of carcinogenicity and mutation.

This study aimed to produce a whey protein isolate (WPI) based nanocomposite film containing copper oxide nanoparticles (CuONPs) with coconut essential oil (CEO) (0, 0.4, 0.8% w/v) and paprika extract (PE) (0, 0.03, 0.06% w/v) using a central compound design (CCD). Antioxidant capacity, water vapor permeability, mechanical properties, antimicrobial activity, morphological characteristics Fourier transform infrared (FTIR), X-ray diffraction (XRD), and thermal properties of films were investigated. In addition to the properties of CuONPs, CEO, and PE, this effect was due to hydrogen interactions between them and the biopolymer matrix. As confirmed by the FTIR and XRD, the co-application of PE and CEO due to the synergistic effect of pigment on the antimicrobial properties of CEO and increasing the content of antimicrobial compounds in the film showed the highest activity against Staphylococcus aureus and Escherichia coli. The results of the thermal property analysis of the films showed the formation of a complex between the nanocomposite film with CEO and PE. In summary, the results of the present study showed that nanocomposite films containing the combination of PE and the CEO could be useful in food packaging.

Background: Today, the tendency to use biodegradable biopolymers as one of the appropriate technologies to prevent food oxidation has received much attention. Objective: The aim of the present study was to produce a new biodegradable films containing free ethanolic extracts and nanocapsules of kak kosh biabani (Pulicaria gnaphalodes (Vent.) Boiss.), in order to investigate the antioxidant properties in laboratory conditions. Methods: In this study, the effects of different films on mechanical properties, antioxidant activities, encapsulation efficiency, water vapor permeability, microstructure and morphology and color characteristics were evaluated. Results: The average particle size was 153-166 nm and the encapsulation efficiency was 49.87-73.07%. Nanoliposomes with the lowest size and highest encapsulation efficiency were merged with the film samples. The results obtained from FT-IR spectra revealed new interactions between chitosan and nanoliposomes. Despite the increase in yellow color and decrease in whiteness indices, the nanoliposome composition improves the mechanical stiffness and results in reduced water vapor permeability (WVP). Conclusion: The properties of chitosan-zein films were affected by the amount of extract used, which generally improved the properties of the films and their antioxidant properties. Due to these features, this film can be used in food storage.

Background:: Unripe grape (Qoura) in the forms of either intact or juice can be used as a flavoring agent in several foods of Iranian cuisines such as soup and salad due to its sour taste. Methods:: In the current study, the effects of microwave (270, 540, and 720 W) and hot air drying (40, 50 and 60°C) on the polyphenol components content and chemical properties (including chroma, hue angle, L* value, total color difference, soluble sugars, acidity, total phenols and phenolic components including rutin, gallic acid, hydroxybenzoic acid, syringic acid, p-coumaric acid, and resveratrol) of Qoura obtained from unripe white seedless grape were investigated. Results:: The obtained results showed that in both methods, by increasing the oven temperature and microwave power, the L value (The L* value was used to express the whiteness and darkness) was decreased. There was a notable reduction in the initial phenolic content of the sample (381.671 mg gallic acid/ 100 g) as a result of both of the used techniques. The initial content of resveratrol was decreased from 30.27 mg/100 g; to 23.07, 16.64, 10.73 mg/100 g sample in the samples treated with the air-drying method at 40, 50, 60°C, respectively. Also, by using the microwave in 270, 540, 720 W, it decreased to 5.77, 5.38. 5.26 mg/100 g sample at 270, 540, 720 Watt, respectively. Conclusion:: The results of the present study revealed that the drying method affects the amount of polyphenolic compounds and physicochemical properties.

Background:The color of food products is one of the most important factors proposed by the consumer. Therefore, incorporation of coloring agents into food dates back to ancient times. Nowadays, various types of synthetic dyes are produced and widely used as part of formulations of food products to increase customer’s interest As the safety of this material is questionable, many of them are banned, or the level of their use is limited by the authorities. Among them, saffron is the only food color permitted for use in Nabat as a traditional rock candy which is mostly consumed in Iran. Therefore, the current investigation was aimed to determine the levels of artificial colors in traditional hard candy (Nabat) manufactured by organized and unorganized sectors distributed in Tehran.Methods:In this regard, 137 samples, (68 samples from unorganized sector and 69 samples from the organized sector), were collected in summer 2016. Analysis of samples was done according to the Iranian national standard through thin layer chromatography method. Also, the High-performance thin layer chromatography was used for reanalyzing five samples.Results:Findings showed that 64.7% of unorganized rock candy contained artificial food colors that 26.53% of these dyes are banned. About 5.8% of samples from the organized sector contained synthetic dyes that 25% of them are forbidden. The most commonly used color in both groups was defined as quinoline yellow.Conclusion:The high percentage of synthetic food color usage in unorganized sectors urges the necessity to control them, especially the incorporation of synthetic food dyes in Nabat. Therefore, the training providers and consumers and the monitoring of the production, have encouraged the manufacturers to develop and deploy health professionals and health license.
