Conservation science and planning, by measuring proxies of biodiversity and ecosystem services provision, aim to identify priority areas for nature conservation and ecosystem services. In Ireland, fine-scale data on ecosystems functioning and biodiversity are limited, making it challenging to map conservation value (CV) and natural capital value (NCV) accurately. We elicited expert knowledge to rank habitat classes mapped in the recently published National Land Cover Map (NLCM) (EPA and Tailte Éireann, 2023). A scoring system from 0 to 10 was used to score habitats based on their estimated provision of biodiversity (CV) and ecosystem services (NCV). As a case study, we applied this scoring system to a catchment in the south-east of Ireland (>2,000 km2) with land cover information available from the draft NLCM. The expert elicitation showed little overall difference between the scores assigned by the team and the experts invited to validate the CV and NCV scores. However, some scores were revised based on experts’ contributions. Results of the mapping exercise indicated a high correlation between monads with high CV and high NCV scores. Future work should focus on differentiating the weighting assigned to each ecosystem service associated with each land cover class. This could result in changes in the overall NCV scores assigned to each habitat (and monads). Nevertheless, the approach developed here has the potential to identify areas in the landscape that should be targeted for conservation. For reproducibility, we provide the R code for analysis at polygon scale.

Abstract Background Amino acids are crucial for nutrition and metabolism, regulating metabolic pathways and activities vital to organismal health and stability. Glycine and histidine act as potent antioxidants and anti-inflammatory agents; however, limited knowledge exists regarding the associations between these amino acids and hyperlipidemia and hypertension. The purpose of this study is to investigate the relationship between dietary glycine and histidine, and hyperlipidemia and hypertension. Methods This population-based cross-sectional study evaluated the influence of dietary glycine and histidine, as well as their combined effect, on hyperlipidemia and hypertension in Chinese adults participating in the Nutrition Health Atlas Project (NHAP). General characteristics were acquired using a verified Internet-based Dietary Questionnaire for the Chinese. Binary logistic regression, along with gender, age groups, and median energy intake subgroup analyses, was employed to investigate the associations between dietary glycine and histidine and hyperlipidemia and hypertension. A sensitivity analysis was conducted to assess the impact of excluding individuals who smoke and consume alcohol on the results. Results Based on the study’s findings, 418 out of 1091 cases had hyperlipidemia, whereas 673 had hypertension. A significant inverse relationship was found between dietary glycine, histidine, and glycine + histidine and hyperlipidemia and hypertension. Abstract Background Aging is an inevitable biological process. Accelerated aging renders adults more susceptible to chronic diseases and increases their mortality rates. Previous studies have reported the relationship between lifestyle factors and phenotypic aging. However, the relationship between intrinsic factors, such as reproductive factors, and phenotypic aging remains unclear. Methods This study utilized data from the National Health and Nutrition Examination Survey (NHANES), spanning from 1999 to 2010 and 2015–2018, with 14,736 adult women. Random forest imputation was used to handle missing covariate values in the final cohort. Weighted linear regression was utilized to analyze the relationship between women-specific reproductive factors and PhenoAgeAccel. Considering the potential impact of menopausal status on the results, additional analyses were conducted on premenopausal and postmenopausal participants. Additionally, the Life’s Essential 8 (LE8) was used to investigate the impact of healthy lifestyle and other factors on the relationship between women-specific reproductive factors and PhenoAgeAccel. Stratified analyses were conducted based on significant interaction p-values. Results In the fully adjusted models, delayed menarche and gynecological surgery were associated with increased PhenoAgeAccel, whereas pregnancy history were associated with a decrease. Additionally, early or late ages of menopause, first live birth, and last live birth can all negatively impact PhenoAgeAccel. The relationship between women-specific reproductive factors and PhenoAgeAccel differs between premenopausal and postmenopausal women. High LE8 scores positively impacted the relationship between certain reproductive factors (age at menarche, age at menopause, age at first live birth, and age at last live birth) and phenotypic age acceleration. Stratified analysis showed significant interactions for the following variables: BMI with age at menarche, pregnancy history, and age at menopause; ethnicity with age at menopause, age at first live birth, and parity; smoking status with use of contraceptive pills and gynecologic surgery; hypertension with use of contraceptive pills, pregnancy history, and age at menopause. Conclusion Delayed menarche, gynecological surgery, and early or late ages of menopause, first live birth, and last live birth are associated with accelerated phenotypic aging. High LE8 score may alleviate the adverse effects of reproductive factors on phenotypic aging.

Abstract Introduction Breastfeeding (BF) is the healthiest form of nutrition for babies and is recommended exclusively (EBF) for at least the first six months of life. The carbon footprint of formula feeding (FF) has been studied, but that of BF is unknown. Aim To identify the environmental impact of three types of infant feeding taking into account the accessories needed and the diet of postpartum women in the baby’s first month of life. Methods This is a multicentre, cross-sectional study conducted in the Barcelona North Metropolitan Area (Catalonia, Spain). The participating sites are primary care settings that will recruit 408 postpartum women (4–6 weeks) as per inclusion/exclusion criteria. The data will be collected through a GREEN MOTHER Survey that includes 4 dimensions: 1) socio-demographic and clinical data; 2) data on the newborn and accessories used in infant feeding; 3) general data on the mother's diet (food consumption habits), and 4) recording of 24 h of the mother’s diet. The data analysis will be performed to check the prevalence of infant feeding types at birth and month 1, as well as a comparative analysis of three types of infant feeding on environmental impact (climate change; water consumption, and scarcity). Ethics. This project was approved by the Research Ethics Committee of the Jordi Gol i Gurina University Institute Foundation for Primary Health Care Research (IDIAP) under code 22/101-P dated 22/02/2023. Discussion A second phase of the GREEN MOTHER study is planned, which will consist of an educational intervention to promote breastfeeding, nutrition and sustainability. This intervention will be based on the results obtained in Phase I. We expect that the project results – through the publication and dissemination of scientific papers and reports among relevant stakeholders (association of community midwives, healthcare and primary care attention professionals and the public) – will increase public awareness of breastfeeding and its impact on sustainability. Trial registration Both phases of the GREEN MOTHER study protocol were registered in ClinicalTrials.gov, NCT05729581.

Abstract Background The occurrence and progression of asthma can be influenced by the components in food. Our study aims to determine whether dietary antioxidant and inflammatory potential are associated with the risk of mortality in asthma patients. Methods Participants from the 2001–2018 National Health and Nutrition Examination Survey (NHANES) aged 20 years and older with a diagnosis of asthma were included. Mortality status was obtained according to death certificate records from the National Death Index. The antioxidant and inflammatory potential of the diet was assessed using two widely used and dependable indices, Composite Dietary Antioxidant Index (CDAI) and Dietary Inflammatory Index (DII). Restricted cubic spline (RCS) regression was used to analyze the non-linear relationship between the two indexes and mortality. Multivariable Cox proportional risk models were used to estimate hazard ratio and 95% confidence intervals for mortality. Finally, the relationship between CDAI and DII was analyzed. Results A total of 4698 NHANES participants represented 23.2 million non-institutionalized residents of the US were enrolled in our study. Patients with higher CDAI or lower DII exhibited longer survival times. RCS regression showed a linear relationship of CDAI or DII with mortality. In the Cox regression, both crude and adjusted models demonstrated that higher CDAI or lower DII was linked to a reduced risk of all-cause mortality. Similar associations were found in subgroup analysis. Finally, a negative relationship was found between CDAI and DII. Conclusion Reducing pro-inflammatory or increasing antioxidant diets could reduce all-cause mortality among adult asthma patients.

Abstract Background With rising obesity rates in Western societies, analyzing changes in dietary patterns is paramount. While nutritional surveys have been informative, traditional cookbooks have historically shed light on national cuisines and its changes. Despite the growing popularity of online platforms for food information, cookbooks might still reflect prevalent dietary trends and the diets people follow. This study examined (1) the changes in nutritional content and food group usage in the best-selling cookbooks from 2008 to 2018, and (2) the correlation between the food groups in these cookbooks and dietary patterns (inferred from household purchases) over the same timeframe. Methods An exploratory ecological study was conducted on 20 main course recipes of each of the five best-selling cookbooks in Flanders annually between 2008 and 2018. Trends in macronutrients and food group usage in these recipes were analyzed using generalized linear models. Additionally, these trends were compared to household purchase data in Flanders using correlation matrices. Results Our results reveal a rising trend towards the use of plant-based ingredients and meat alternatives in cookbooks over the period 2008–2018. There was an increase in the usage of vegetables, nuts & seeds, and cheese. Conversely, there was a decline in the usage of meat, sugar & sweeteners, alcohol, and dairy (all p-values

Abstract Background The relationship between obesity and diabetic retinopathy (DR) remains controversial, and the relationship between sarcopenic obesity and DR is still unclear. The purpose of this study is to investigate the relationship between obesity, sarcopenic obesity, and DR in patients with type 2 diabetes mellitus (T2DM). Methods A cross-sectional study was conducted on patients with T2DM. Obesity was assessed by body mass index (BMI), fat mass index (FMI), android fat mass, gynoid fat mass, and visceral adipose tissue (VAT) mass. Sarcopenia was defined according to the criteria of Consensus of the Asian Working Group for Sarcopenia (AWGS 2019). Sarcopenic obesity was defined as the coexistence of sarcopenia and obesity. The association between obesity, sarcopenic obesity, and DR was examined using univariable and multivariable logistic regression models. Results A total of 367 patients with T2DM (mean age 58.3 years; 57.6% male) were involved in this study. The prevalence of DR was 28.3%. In total patients, significant adverse relationships between obesity and DR were observed when obesity was assessed by BMI (adjusted odds ratio [aOR] 0.54, 95% confidence interval [CI] 0.31 to 0.96, p = 0.036), FMI (aOR 0.49, 95% CI 0.28 to 0.85, p = 0.012), android fat mass (aOR 0.51, 95% CI 0.29 to 0.89, p = 0.019), gynoid fat mass (aOR 0.52, 95% CI 0.30 to 0.91, p = 0.021) or VAT mass (aOR 0.45, 95% CI 0.25 to 0.78, p = 0.005). In patients with T2DM and obesity, the prevalence of sarcopenic obesity was 14.8% (n = 23) when obesity was assessed by BMI, 30.6% (n = 56) when assessed by FMI, 27.9% (n = 51) when assessed by android fat mass, 28.4% (n = 52) when assessed by gynoid fat mass, and 30.6% (n = 56) when assessed by VAT mass. Sarcopenic obesity was associated with DR when obesity was assessed by BMI (aOR 2.61, 95% CI 1.07 to 6.37, p = 0.035), android fat mass (aOR 3.27, 95% CI 1.37 to 7.80, p = 0.007), or VAT mass (aOR 2.50, 95% CI 1.06 to 5.92, p = 0.037). Conclusions Patients with T2DM showed a substantial inverse relationship between DR and obesity, and sarcopenic obesity was considerably favorably associated with DR. Detection of sarcopenia in patients with T2DM, especially in obese T2DM, is essential to guide clinical intervention in DR.

Abstract Methionine, an indispensable amino acid crucial for dietary balance, intricately governs metabolic pathways. Disruption in its equilibrium has the potential to heighten homocysteine levels in both plasma and tissues, posing a conceivable risk of inducing inflammation and detriment to the integrity of vascular endothelial cells. The intricate interplay between methionine metabolism, with a specific focus on S-adenosyl-L-methionine (SAM), and the onset of thoracic aortic dissection (TAD) remains enigmatic despite acknowledging the pivotal role of inflammation in this vascular condition. In an established murine model induced by β-aminopropionitrile monofumarate (BAPN), we delved into the repercussions of supplementing with S-adenosyl-L-methionine (SAM) on the progression of TAD. Our observations uncovered a noteworthy improvement in aortic dissection and rupture rates, accompanied by a marked reduction in mortality upon SAM supplementation. Notably, SAM supplementation exhibited a considerable protective effect against BAPN-induced degradation of elastin and the extracellular matrix. Furthermore, SAM supplementation demonstrated a robust inhibitory influence on the infiltration of immune cells, particularly neutrophils and macrophages. It also manifested a notable reduction in the inflammatory polarization of macrophages, evident through diminished accumulation of MHC-IIhigh macrophages and reduced expression of inflammatory cytokines such as IL1β and TNFα in macrophages. Simultaneously, SAM supplementation exerted a suppressive effect on the activation of CD4 + and CD8 + T cells within the aorta. This was evidenced by an elevated proportion of CD44- CD62L + naïve T cells and a concurrent decrease in CD44 + CD62L- effector T cells. In summary, our findings strongly suggest that the supplementation of SAM exhibits remarkable efficacy in alleviating BAPN-induced aortic inflammation, consequently impeding the progression of thoracic aortic dissection.

Abstract Aim Nutritional characteristics and additives in ultra-processed foods (UPF) are directly related to bone health. Physical activity as a modifiable lifestyle intervention also plays a possible role in bone mineral density (BMD), but effect of physical activity on association between UPF and osteoporosis is not fully understood. Herein, this study aims to explore the association of UPF with osteoporosis, and assess the potential mediating effects of some related factors on this pathway. Methods Data of adults were extracted from the National Health and Nutrition Examination Survey (NHANES) database in this cross-sectional study. Associations of unprocessed/minimally processed food (MPF), processed culinary ingredient (PCI), processed foods (PF) and UPF with femur neck BMD, total femur BMD and osteoporosis were investigated using linear regression and weighted univariate and multivariate logistic regression analyses respectively. Subgroup analyses of age, gender, physical activity, poverty income ratio (PIR), hypertension, diabetes mellitus (DM), cardiovascular disease (CVD), and dyslipidemia were performed. The potential mediating and interaction effects of physical activity and related factors on association of UPF with osteoporosis were also assessed. The evaluation indexes were β, odds ratios (ORs) and 95% confidence intervals (CIs). Results Among 10,678 eligible persons, 454 had osteoporosis. After adjusting for covariates, elevated UPF intake was associated with decreased demur neck and total femur BMD (β=-0.003). A higher UPF intake level (> 57.51%) was linked to higher odds of osteoporosis (OR = 1.789). These relationships were also significant in different subgroups. Physical activity had a potential mediating effect on the association between UPF and osteoporosis (OR = 0.47, mediating proportion = 21.54%). Conclusion UPF intake levels were associated with BMD and osteoporosis. Physical activity had an interaction effect with UPF, and had a potential mediating effect on relationship between UPF and osteoporosis.

Abstract The food security problem is exacerbated by low production and crop loss in many parts of the world and Ethiopia in particular. Prior literature less documented the role of innovative adaptation strategies to climate variability in ensuring food security. This study investigated the current status of food security and the role of adaptation strategies in the context of climate unpredictability in the Ghibe III dam area, in Southern Ethiopia. To achieve the intended objective, data were collected from 175 adapters and 209 non-adapters through multi-stage sampling using a questionnaire supplemented with key informant interviews and focus group discussions. A probit regression model was used to determine the factors affecting farmers’ adaptation. Propensity score matching (PSM) was employed to evaluate the impact of the adaptation strategies on food security. Food security was measured by the food balance sheet model (HBSM)). The rainfall anomaly index and Mann–Kendall tests were employed for the analysis of rainfall and temperature. The findings showed that throughout 30 years, temperatures were rising while rainfall was falling. Receiving early warning weather systems, credit services, extension services, family size, and farm size had a significant impact on adaptation strategies at a 1% level. Adapters showed an increase in food security (7–9%) than non-adapters. Adapters consumed 2101.6 mean calories per day/adult equivalent compared to non-adapters who consumed 1151.5 kcal. Conservation agriculture and climate-resilient crop varieties should be implemented by farmers supported by local-level government bodies at large.

Abstract The consumption of locally available and affordable food with high nutritional properties is a recommended solution to prevalent undernutrition in low-income countries. The objective of this study was to investigate the nutritional and phytochemical profile of a traditional beverage made from roasted green or red roselle seeds. Proximate composition was determined using AOAC standard methods. Minerals and phytochemicals were quantified by atomic and molecular absorption spectrophotometry, respectively. The bioavailability of iron, zinc, and calcium was estimated using phytates/mineral molar ratios. A sensory analysis was conducted to evaluate the acceptability of the studied beverages, and their contribution to the Recommended Daily Intake of proteins, energy, iron, zinc, and calcium was also assessed. The beverage made from roasted green roselle seeds presented the highest content of proteins, fats, total fibres and energy, while the beverage made from roasted red roselle seeds was more concentrated in carbohydrates. Both beverages had similar contents of total phenols, oxalates, ascorbic acid but exhibited different phytates and carotenoids contents that were higher in the beverage made from roasted red roselle seeds. The mineral composition revealed higher contents of sodium, potassium, magnesium, phosphorus, zinc, and copper in the beverage made from roasted red roselle seeds, while iron and manganese were more concentrated in the beverage made from roasted green roselle seeds. A good bioavailability was observed for iron and zinc in the beverage made from roasted red roselle and green roselle seeds, respectively. An unfavourable calcium bioavailability was exhibited by both beverages. The consumption of 500 mL of the studied beverages, which were positively appreciated by the sensory test panel, could cover more than 100% of the Recommended Daily Intake of proteins, energy, zinc, and more than 50% of that of iron, for children up to 3 years old. The consumption of beverages made from roasted roselle seeds could be an efficient and affordable solution to undernutrition in low-income countries.

Abstract A prototype refrigerated unit with a capacity of 30 to 60 kg depending on bulk density was designed and developed to preserve fresh fruits and vegetables. The performance of the device was evaluated in terms of cooling time, cooling efficiency, specific energy consumption, unit device cost, and quality of stored products. Guava and cauliflower were stored in the device at 5 ± 1 °C and 6 ± 1 °C, respectively at 95 ± 2% relative humidity (RH) to evaluate the storing performance of the device. The cooling time was 2.08 ± 0.05 h at 5 °C and the device showed little fluctuation in relative humidity under load conditions compared to empty conditions at set temperatures of 5 °C and 6 °C. Notably, the cooling efficiency of the device was 93 ± 2% with specific energy consumption of 0.0524 and 0.1104 kWh/kg day for preserving guava and cauliflower, respectively. The overall preservation cost was $0.116 and $0.242 per kg per month for guava and cauliflower, respectively. The results revealed that the shelf life of guava extended for 18 days in this refrigerated device with minimal quality degradation and a weight loss of 3.78%, compared with freshly harvested guava. On the contrary, the weight loss, firmness, pH, and whiteness index for cauliflower at 18 days were 7.17%, 7.17 kg/cm2, 6.59, and 64.19, respectively. Meanwhile, the fresh cauliflower exhibited a firmness of 9.85 kg/cm2, a pH of 5.74, and a whiteness index (L*) of 65.58. The results demonstrated that the freshness of stored fruits and vegetables was preserved, meeting physiological and chemical quality standards. Therefore, the inexpensive refrigeration system, effectively maintains necessary temperature and humidity levels, offering a profitable solution for minimizing post-harvest losses at the greengrocer level. Additionally, the scientific methodology outlined can be readily applied to develop commercial-scale refrigeration units for preserving high-moisture produce.

Abstract The primary focus of the review is on the physiological, biochemical, and agronomic aspects of plant-based proteins, with particular emphasis on their effectiveness as both food sources and biostimulants. A comprehensive review of peer-reviewed articles, scientific journals, and industry reports was conducted using databases such as PubMed, Scopus, and Web of Science. Various plant species including cereals, legumes, oilseeds, nuts, pseudocereals, and tubers are recognized as promising sources of plant-derived proteins. The exploration of plant biodiversity for biostimulant and protein food production, coupled with the utilization of diverse biostimulants, is deemed essential. Moreover, the suggestion that the development of plant-based protein sources is particularly viable in regions where animal agriculture is resource-intensive or economically infeasible is discussed. Embracing these plant-based solutions aligns with the goals of new food development and ecological agriculture, fostering the development of a more resilient and interconnected food system.

Abstract Background Analysis of food self-sufficiency at the regional level helps to better understand its dependency on, and vulnerability to, the food system. Moreover, achieving food self-sufficiency has gained prominence in the present policy agenda to increase resilience to adverse events and lower food resource footprint. Using a novel method, we estimated the food balance sheets of Scotland, the second-largest region in the United Kingdom, and assessed the self-sufficiency of major food commodities for the first time. Methods Data from 2003 to 2019 were obtained from Economic Reports on Scottish Agriculture and the Department for Environment, Food and Rural Affairs (DEFRA)’s family food statistics. Food import and export data are not readily available for Scotland. Therefore, we developed a consumption-based approach to estimate the net trade values of each commodity. We also assessed the contribution of domestic production toward nutrient security. Results According to our estimates, Scotland is a net exporter of beef, exporting an average of 51.3 thousand tons per year. It is also a net exporter of cereal (wheat, barley, oats) and potatoes, although this was not always the case between 2003 and 2019. Scotland has a strong level of self-sufficiency in cereals, potatoes, lamb, beef, dairy, and eggs. However, there is room for improvement in achieving self-sufficiency in poultry and pork, where the self-sufficiency ratio is relatively low. Our analysis of nutrient security indicates that wheat and dairy sourced from Scotland play crucial roles in the food supply chain, markedly influencing total energy, dietary protein, and primary dietary fat sources. Conclusions Our assessment can serve as a foundation for evidence-based decision-making in Scotland's agricultural and food policy. It offers insights into where investments and support may be needed to enhance domestic production and promote a resilient and sustainable food system. Estimated self-sufficiency ratios provide a more accurate assessment of the extent of food localization in Scotland. The method we developed in this study has the potential to be a valuable tool for future research studies, allowing for the estimation of regional-level food self-sufficiency even when trade data and food balance sheets are unavailable.

Abstract The main waste generated by juice industry comprises orange peels, which have a great upcycling potential once stabilized. Drying is the most used method for this purpose, but the high energy consumption prompts interest in its intensification. This study assessed the influence of freeze-thaw and pulsed electric field (PEF) pretreatments in conventional and airborne ultrasound-assisted drying (50 °C) of orange peels. None of these pretreatments alone got to reduce processing times significantly, but combined with ultrasound-assisted drying produced a significant shortening of the process. This was particularly important in the lower intensity PEF pretreatment tested (0.33 kJ/kg), indicating the existence of optimum conditions to carry out the pretreatments. Microstructure analysis revealed that the application of ultrasound during drying led to better preservation of the sample structure. Thus, the integration of pretreatment techniques to ultrasound-assisted drying may not only shorten the process but also help to preserve the original structure.

Abstract Fermented food consumption is recommended for health and environmental purposes. While it is known to impact gut microbiota, further investigation is needed to establish connections with the oral microbiota. For this purpose, we investigated the effect of daily consumption of a model cheese containing 3 Lactic Acid Bacteria (LAB) species on the oral microbiota of rats following a 3-week diet. Cheese consumption transiently modifies the oral microbiota and leads to a transient persistence of LAB in the oral cavity of 1/3 of the animals. The origin of this variability was partly explained by an overrepresentation of salivary proteins involved in the response to oxidative stress in animals without LAB persistence. These findings highlight the significance of fermented foods in shaping the diversity of the oral microbiota. Additionally, they suggest that variations in the salivary proteome among individuals may influence the permissiveness of the oral microbiota towards exogenous microorganisms.

Abstract The emerging world of 3D food printing is reviewed. Its role in food manufacturing, including benefits and impacts, underemphasized gastrophysical aspects, and limitations are discussed. Foods can be digitally designed and physically prepared using the layer-by-layer deposition of food components, unleashing opportunities to deliver nutritionally personalized food and new food-human interactions. Existing bottlenecks, under-researched gastropsychophysical aspects, and the lack of harmonized standards hindering its use for mass production are mentioned.

Abstract Caffeine consumption is associated with the evening chronotype, and caffeine administration in mice results in prolonged period of the circadian rhythm in locomotor activity. However, as caffeine is bitter, sweetened caffeine is preferred by humans and mice; yet, its impact on the circadian clock has not been explored. In this study, mice were provided with freely available sweetened caffeine to investigate its effects on behavioral rhythms and peripheral clocks. Mice that freely consumed sweetened caffeine shifted from nocturnal to diurnal activity rhythms. In addition to the light-dark entrained behavioral rhythm component, some animals exhibited free-running period longer than 24-h. Intraperitoneal administration of caffeine at the beginning of the light phase also acutely induced diurnal behavior. The behavioral rhythms with long period (26–30 h) due to sweetened caffeine were observed even in mice housed under constant light or with a lesioned central circadian clock located in the suprachiasmatic nucleus of the hypothalamus; however, the rhythmicity was unstable. PER2::LUCIFERASE rhythms in peripheral tissues, such as the kidney, as measured via in vivo whole-body imaging during caffeine consumption, showed reduced amplitude and desynchronized phases among individuals. These results indicate that consumption of sweetened caffeine induces diurnal and long-period behavioral rhythms irrespective of the central clock, causing desynchronization of the clock in the body.

While historians have used menus to tell part of the histories of restaurants, little guidance has been provided on how we should approach these unique culinary documents. This lack of instruction becomes more apparent in light of the impressive amount of archival work and digitization of historical menus done in recent years. As a response, this article presents a method that I have developed for analyzing menus. Drawing on interdisciplinary perspectives as well as experience teaching and researching with menus, this method recognizes menus as documents that can reveal the many relationships and connections intersecting in, flowing through, and making up restaurants. This method is divided into four steps: 1) (Un)Identifiable details; 2) Logics/story; 3) Mess or Marginalia; and 4) Cross-Menu comparison. By moving the reader through the method and offering an example of historical menu analysis, this article demonstrates some of the many historical insights that emerge through careful consideration of these sources.

Food asset mapping is gaining prominence in Canada as an important planning tool for the evaluation of local food systems. In addition to being used by planners to identify opportunities for improved food security, food asset maps are also valuable references for sourcing food locally, particularly by people experiencing food insecurity. Seventy-three food asset maps were reviewed and categorized based on the types of food assets included as well as design characteristics. Built environment assets such as grocery stores and food banks were included in most maps, as were agriculture-based natural food assets like farms, community gardens, and orchards. However, representations of Indigenous-focussed food assets and natural food assets that are not agriculture-based, such as forests, water bodies, and foraging areas, were generally lacking. The lack of representation of Indigenous perspectives on what is considered a food asset reinforces the values of a settler-colonial food system in food asset maps. The methods for food asset mapping therefore need to be changed from current quantitative practices that largely rely on secondary data sources led by governments and non-profit organizations to collaborative approaches that centre the perspectives of Indigenous peoples and other equity deserving groups.

In Canada, the task of explaining food prices falls to a handful of grey literature reports that shape media coverage and public understanding and carry significant political and policy influence. We performed an in-depth analysis of fifty-one of these influential reports, including thirty-nine reports by Statistics Canada (including Consumer Price Index reports and other studies) and twelve reports from the Canada Food Price Report (CFPR) series. Our goal was twofold: 1) to identify and classify the various explanations given for food price changes, and 2) to evaluate the scientific rigor of these explanations. We identified 232 total explanations for food price changes, spread across seven thematic categories and thirty-two sub-categories. We find that most claims made in these reports are scientifically incomplete (only 28.6% of all claims meet established criteria for the completeness of scientific arguments). We also identify a lack of comprehensiveness in the areas of emphasis and the claims being presented and drivers being explored, particularly with respect to issues presently at the centre of food price discourse in Canada, such as the agency of grocers and other supply chain actors, corporate growth imperatives, and climate change. Considering the importance of food prices and food security to prosperity and well-being in Canada, we conclude with a series of recommendations for strengthening the scientific rigor of these reports, including greater inclusion of supporting evidence, opportunities for peer review, and increased transparency regarding conflicts of interest and funding sources.

This perspective is a continuation of a conversation started during “Reimagining Food, Food Systems, and Food Studies,” a plenary session in which we, the authors, participated at the eighteenth annual assembly of the Canadian Association for Food Studies (CAFS). Assessing current opportunities and limitations for food studies in Canada from our perspectives as emerging scholars, the CAFS panel presented our individual and collective proposals for evolving the field. This article builds on the resonances and dissonances from our discussion to craft a provisional “recipe” for reimagining food studies. Recognizing the shortcomings of the format in terms of its prescriptive connotations, we position recipes not as rigid guidelines for achieving predefined outcomes, but as creative models for generating improvisations. We begin with an overview of the ingredients that have come together to create food studies in Canada. Next, we offer some revisions in the margins of this recipe based on the work in which we are engaged as food scholars and practitioners. Finally, we consider next steps for the work of evolving the field, and we invite readers to share in this exchange. Overall, we observe and participate in an unfinished trajectory that extends from previous questions on why food studies should exist and what food studies is, to consider more deeply how food studies could be done.

“Food sovereignty,” a term conceived by peasant agriculturalists in South America, has become ubiquitous worldwide in academic and activist circles advocating for greater local control over local food. Its use has been adopted by various actors in North America, most notably by agriculturalists that tend to be small-scale, family-run, or permaculture focussed. While Indigenous food sovereignty has emerged as an adaptation of this concept, ecological, economic, social, and political opportunities and constraints in different locations across Turtle Island make its widespread application challenging, especially in contexts where communities do not want, or cannot (for a variety of reasons) eat exclusively from the land. In addition, “food sovereignty” can become a chimera in contexts where the “Crown” has absolute and final “sovereignty” over the land, which they have demonstrated through multiple enforcements across Turtle Island. Using a decolonial feminist lens within a political ecology community of practice, this paper describes and critiques current and historic framings of northern Ontario boreal forests as variously and simultaneously scarce and abundant. It also analyzes the ways that these framings have been discursively and materially constructed through colonial social, ecological, economic, and political impositions. It asks whether the concept of food sovereignty adequately challenges these constructions. Ultimately, this paper suggests that thinking about Indigenous food sovereignty as sovereignty of and through food may better describe the process, importance, and potential inherent in traditional and alternative Indigenous food harvesting and distribution practices in First Nations communities in northern Ontario, and indeed, beyond.

While Canadian policy makers are considering expanding school food programs in Canada, parents remain primarily responsible for packing lunches. Although women perform disproportionate amounts of foodwork, including feeding their children on school days, little research has investigated mothers’ experiences of packing school lunches in Canada. Drawing on 14 interviews with mothers of elementary-aged children in British Columbia, this study explored how mothers experience and make meaning of packing school lunches. Mothers described lunch packing largely as an individualized responsibility for children’s nutritional health and general wellbeing. Mothers strived to enact largely unattainable ideals about packing a “good” school lunch and engaged in diverse forms of physical, mental, and emotional labour to do so. When mothers were perceived to fall short of elusive lunch packing ideals, mothers judged themselves and other mothers, and also reported feeling scrutinized by other parents, teachers, and their children. While assuming the bulk of labour related to school lunch work, mothers also forged connections with their children through lunch packing, which they viewed as emotionally meaningful and a symbol of their care, love, and parental responsibility. These findings show that mothers’ experiences with lunch packing are complex and wrapped up in notions of “good” mothering and feeding ideals. For mothers, a “balanced” lunch requires not only a nutritionally adequate meal, but also involves balancing various forms of labour and contradictory emotions about food work. Understanding mothers’ experiences of lunch packing is pivotal for successfully developing school food programs that meet the complex expectations of Canadian families.

In this editorial, the Management Team of Canadian Food Studies / La Revue canadienne des études sur l’alimentation (CFS/RCÉA) looks back across the history of the journal and towards its future. They collectively reflect on the journal’s ethos, its range of publications, and what the future might hold in an effort to promote rigorous scholarship done differently.

In this reflexive piece, the authors consider the unexpected lessons learned while undertaking a collaborative research project with their home institution’s Indigenous Learning Centre on urban berry foraging. The faculty member questions the ethics of settlers undertaking this work, even if in collaboration with an Indigenous community, alongside the promises of this work to critical food studies. The practice of urban foraging is understood as a wider metaphor for Indigenous worldview, and for different ways of being and relating. The student’s reflections weave together themes of learning outside the classroom, with family and community, and the holistic aspects of doing research.

A growing number of women in the Canadian Prairie region are advancing into leadership roles in agriculture, which remains a predominantly male domain. In this research we explore how professionally and managerially employed women in agriculture in the provinces of Manitoba, Saskatchewan, and Alberta navigate being a leader in an industry characterized by rural hegemonic masculinity. We explore and examine the personal experiences and observations of these women regarding gender, leadership, and the current state of prairie agriculture as it grapples with being more inclusive, diverse, and equitable. We found that to gain legitimacy as a leader in agriculture women are enacting a complex mix of traditional femininity, anti-affirmative action, and masculine-coded farm credibility. Women are required to be both like a man and like a woman to differentiate themselves—both from men and from one another—as they navigate both similarity and difference in their gender performance. Expanding on the work of Mavin and Grandy’s (2016) work on respectable business femininity, we have conceptualized this performance as “respectable farm femininity” to reflect the specific experiences, and previously unexplored domain of women in agricultural leadership (outside of the on-farm contexts that make up the scholarship in this area). These expectations are rooted in more traditional constructions of rural, hegemonic masculinity, but carry important weight in conferring legitimacy to women in agricultural leadership. This has important implications for how women are able to carve out their career path on the way to leadership.

An overwhelming number of Canadians believe that a national school food program (SFP) would benefit children, but concerns around limited funding are frequently raised. SFPs across Canada are struggling to meet increasing demands due to rising food costs, meaning that food quality and quantity within existing SFPs are suffering. This paper discusses the urgency to implement a cost-shared and federally funded SFP amidst the current economic context and lack of clear direction from the federal government. The paper also explores ways in which federal funding for school meals can help to reduce the rate of chronic diseases and actualize many proven physical and mental health benefits for Canadians, all of which have positive and long-term downstream effects on the country’s economy.

A riff on the well-riffed Proust Questionnaire, the CFS Choux Questionnaire is meant to elicit a tasty and perhaps surprising experience, framed within a seemingly humble exterior. (And yes, some questions have a bit more craquelin than others.) Straightforward on their own, the queries combined start to form a celebratory pyramid of extravagance. How that composite croquembouche is assembled and taken apart, however, is up to the respondents and readers to determine. Respondents are invited to answer as many questions as they choose. The final question posed—What question would you add to this questionnaire?—prompts each respondent to incorporate their own inquisitive biome into the mix, feeding a forever renewed starter culture for future participants. For this edition, our respondent has replied to a question from Lisa Heldke (CFS Vol. 10 #2). Our Choux Questionnaire respondent for this issue is Greg de St. Maurice, an Associate Professor in Keio University’s Faculty of Business and Commerce. He holds a PhD in Cultural Anthropology (University of Pittsburgh) and Master’s degrees from Oxford University, Ritsumeikan University, and American University. He served as the Vice President of ASFS from 2017 to 2022.

Abstract There is growing concern among policymakers and researchers about the negative health and climate impacts of meat consumption. Consumers are encouraged to re-evaluate their dietary choices to preserve our ecosystem and reduce the burden of diet-related diseases. However, limited information is available about how price changes in animal protein sources affect plant-based protein demand and the consequences for nutrient intake and/or diet quality. The goal of the present paper is to fill this gap by explaining how consumers react to price changes in animal protein types and to present the implications for nutrition or diet quality. This paper applied the exact affine stone index implicit (EASI) Marshallian demand system to 2021 home scan panel data collated by the Kantar Worldpanel to estimate both price and expenditure elasticities. Twelve food groups of seven animal-based protein products and five plant-based protein products were considered. The results revealed that dairy and eggs are daily necessities for the people of Scotland. The demand for fish and non-dairy milk are the most sensitive to price. Estimates based on expenditure elasticities show that beef is considered a luxury and a highly substitutable product in the Scottish diet. Peas are relatively basic, essential foodstuffs. In general, increasing the price of animal protein sources will shift demand towards plant protein. On the positive side, there will be a significant reduction in cholesterol and fat purchases. However, there would also be a significant reduction in the total amount of protein, carbohydrates, and healthy fats, such as unsaturated fatty acids, purchased by the average household. This shows that increases in plant-based protein are not enough to compensate for the reductions in essential macro- and micronutrient purchases from animal protein. From the climate perspective, reductions in meat purchases could reduce emissions from production and consumption.

Abstract This paper seeks to draw a research agenda for unveiling the underlying bottlenecks and possibilities for improving the agricultural total factor productivity in the European Union (EU). To this aim, the paper first surveys the key challenges for the modern agricultural economy. Then, the case of the EU is discussed by looking at the convergence in the partial productivity indicators (including the GHG emission) and growth efficiency that relate to the gap in the total factor productivity growth. The results suggest that the EU member states exhibited growth inefficiency (i.e., a gap in the total factor productivity growth) of 5–9% on average during 2004–2021. The paper also discusses the possibilities to utilize the production theory for assessing the pathways towards improvements in the productivity and sustainability of the EU agriculture.

Abstract Background Dietary diversity has been suggested as a potential preventive measure against frailty in older adults, but the effect of changes in dietary diversity on frailty is unclear. This study was conducted to examine the association between the dietary diversity score (DDS) and frailty among older Chinese adults. Methods A total of 12,457 adults aged 65 years or older were enrolled from three consecutive and nonoverlapping cohorts from the Chinese Longitudinal Healthy Longevity Survey (the 2002 cohort, the 2005 cohort, and the 2008 cohort). DDS was calculated based on nine predefined food groups, and DDS changes were assessed by comparing scores at baseline and the first follow-up survey. We used 39 self-reported health items to assess frailty. Cox proportional hazard models were performed to examine the association between DDS change patterns and frailty. Results Participants with low-to-low DDS had the highest frailty incidence (111.1/1000 person-years), while high-to-high DDS had the lowest (41.1/1000 person-years). Compared to the high-to-high group of overall DDS pattern, participants in other DDS change patterns had a higher risk of frailty (HRs ranged from 1.25 to 2.15). Similar associations were observed for plant-based and animal-based DDS. Compared to stable DDS changes, participants with an extreme decline in DDS had an increased risk of frailty, with HRs of 1.38 (1.24, 1.53), 1.31 (1.19, 1.44), and 1.29 (1.16, 1.43) for overall, plant-based, and animal-based DDS, respectively. Conclusions Maintaining a lower DDS or having a large reduction in DDS was associated with a higher risk of frailty among Chinese older adults. These findings highlight the importance of improving a diverse diet across old age for preventing frailty in later life.

Abstract Background Cardiovascular disease (CVD) remains the foremost cause of mortality globally. Taurine, an amino acid, holds promise for cardiovascular health through mechanisms such as calcium regulation, blood pressure reduction, and antioxidant and anti-inflammatory effects. Despite these potential benefits, previous studies have yielded inconsistent results. This meta-analysis of randomized controlled trials (RCTs) aims to evaluate the existing evidence on the quantitative effects of taurine on hemodynamic parameters and cardiac function grading, which are indicative of overall cardiovascular health and performance. Methods We conducted an electronic search across multiple databases, including Embase, PubMed, Web of Science, Cochrane CENTRAL, and ClinicalTrials.gov, from their inception to January 2, 2024. Our analysis focused on key cardiovascular outcomes, such as heart rate (HR), systolic blood pressure (SBP), diastolic blood pressure (DBP), left ventricular ejection fraction (LVEF), and New York Heart Association (NYHA) Functional Classification. Meta-regression was applied to explore dose-dependent relationships based on the total taurine dose administered during the treatment period. A subgroup analysis, stratified according to the baseline disease status of patients, was also conducted. Results The analysis included a pooled sample of 808 participants from 20 randomized controlled trials. Taurine demonstrated a significant reduction in HR (weighted mean difference [WMD] = -3.579 bpm, 95% confidence interval [CI] = -6.044 to -1.114, p = 0.004), SBP (WMD = -3.999 mm Hg, 95% CI = -7.293 to -0.706, p = 0.017), DBP (WMD: -1.435 mm Hg, 95% CI: -2.484 to -0.386, p = 0.007), NYHA (WMD: -0.403, 95% CI: -0.522 to -0.283, p

Abstract Background Skipping breakfast is associated with negative health-related and school-related outcomes. Breakfast is the most frequently skipped meal among adolescents. Thus, there is a need to explore the reasons for breakfast skipping across population subgroups to better inform policy makers. The purpose of this study was to present the prevalence of adolescents skipping breakfast on schooldays, analyse the reasons for skipping breakfast and assess associations between the prevalence of skipping breakfast and the reasons for skipping breakfast according to sociodemographic variables. Methods The data of a random sample of 10 000 upper secondary school students (aged 16–18 years) from Viken County, Norway, were collected. Students completed a questionnaire measuring breakfast skipping, reasons for skipping breakfast, and sociodemographic variables. Chi-square tests were used to assess differences between the independent groups (family affluence scale (FAS), parental education, and gender) and skipping breakfast and reasons for skipping breakfast. Results 22% of adolescents reported that they usually skipped breakfast on all schooldays. Skipping breakfast was more prevalent among females, older students, students with lower socioeconomic status and students in vocational education programmes. The difference in breakfast skipping between students with low and high FAS scores was 31% versus 16%, respectively. The most common self-reported reasons for skipping breakfast were time (59%) and not wanting to eat breakfast (48%). Furthermore, 9% reported health issues, and 3% reported economic constraints as a reason for skipping breakfast. Not wanting to eat breakfast was related to a higher FAS score, health issues were more common among girls, and economic constraints were more common among those with low socioeconomic status. Conclusions Skipping breakfast was common among Norwegian upper secondary school students. Lack of time and not wanting breakfast were clearly the most cited reasons for skipping breakfast. Health issues and economic constraints were also cited but were less common. The results showed diverging associations between different demographic characteristics and reasons for skipping breakfast. These results are important for developing effective programs to improve diet among adolescents.

Abstract Background Vitamin D supplementation may prevent acute respiratory infections (ARIs). This study aimed to identify the optimal methods of vitamin D supplementation. Methods PubMed, Embase, Cochrane Central Register of Controlled Trials, Web of Science, and the ClinicalTrials.gov registry were searched from database inception through July 13, 2023. Randomized-controlled trials (RCTs) were included. Data were pooled using random-effects model. The primary outcome was the proportion of participants with one or more ARIs. Results The analysis included 43 RCTs with 49320 participants. Forty RCTs were considered to be at low risk for bias. The main pairwise meta-analysis indicated there were no significant preventive effects of vitamin D supplementation against ARIs (risk ratio [RR]: 0.99, 95% confidence interval [CI]: 0.97 to 1.01, I 2 = 49.6%). The subgroup dose–response meta-analysis indicated that the optimal vitamin D supplementation doses ranged between 400–1200 IU/day for both summer-sparing and winter-dominant subgroups. The subgroup pairwise meta-analysis also revealed significant preventive effects of vitamin D supplementation in subgroups of daily dosing (RR: 0.92, 95% CI: 0.85 to 0.99, I 2 = 55.7%, number needed to treat [NNT]: 36), trials duration

Abstract Background Despite progress, the prevalence of childhood undernutrition in India remains amongst the highest globally. Objective We aimed to evaluate the impact of a functional integration interventional package during the antenatal period on childhood growth parameters. Methods This is a post-interventional follow-up study of a maternal nutrition interventional study conducted between 2018 and 2019 among women in their first trimester of pregnancy from three districts in West Bengal, India. Pregnant women received a package of augmented interventions from study staff which supplemented those provided to them under the state-run programmes, that included body-mass-index measurement at pregnancy registration, monthly weight monitoring, targeted dietary counselling, supervised supplementary nutrition intake and iron-folic acid supplementation during daily anganwadi center visits. In the current follow-up study conducted in 2021, age-matched pregnant women from the same areas who were pregnant during the same period as in the original study and had received standard-of-care under the state-run programmes were recruited into a comparison group. Study staff collected data regarding maternal height and serial weights that were recorded at antenatal visits in 2018-19, and birth and infant characteristics. Child height and weight were measured during the follow-up visit in 2021, which were used to calculate the relative risks of stunting, wasting and underweight using generalized linear models, to understand the sustained impact of the intervention beyond infancy. Eight-hundred-nine mother-child dyads (406 intervention; 403 comparison) were followed. Results Median age of women in the intervention and comparison group was 23 (IQR 20–25) and 25 (IQR 24–27) years respectively. Median gestational-weight-gain was higher amongst intervention group women (9 vs. 8 kg, p = 0.04). Low-birth-weight prevalence was 29.3% (119/406) and 32.0% (129/403) in the intervention and comparison group. At 12–35 months of age, children born to women in the intervention group had significantly reduced risk of stunting (RR = 0.65, 95% CI 0.44–0.94), wasting (RR = 0.57, 95% CI 0.33–0.97) and underweight (RR = 0.61, 95% CI 0.42–0.88). Conclusions These results indicate that functional integration and strengthening of routine antenatal care services including targeted nutritional counselling to expectant mothers can have distal beneficial effects on childhood undernutrition beyond the immediate post-natal period.

Abstract Background On 6 April 2022, legislation came into effect in England requiring calorie labels to be applied to food items on menus of larger food businesses. This study aimed to assess the impact of calorie labelling on (a) food purchased and (b) energy content of menu options in worksite cafeterias. Methods Product-level sales data and energy content of available items was obtained from 142 worksite cafeterias from January 2022-October 2022. Interrupted-time-series (ITS) analysis with level and slope change evaluated daily energy (kcal) purchased per item, and ITS with level change assessed mean energy per option available on menus before and after calorie labelling. Each analysis was conducted 6 weeks and 6 months from implementation. A post-hoc ITS examined weekly energy purchased per item over a longer period (March 2021-October 2022; 135 sites). Results There was no evidence calorie labelling changed the energy content of foods purchased (6-week: + 0.60 cal/product, 95%CI:-2.54, + 3.75; 6-month: + 1.59 cal/product, 95%CI:-0.96, + 4.16). Post-hoc analyses suggested calorie labels were associated with a reduction in mean energy of items purchased over time (-0.65 kcal/week, 95%CI:-0.81,-0.49), but a significant increase (+ 3 kcal, 95%CI: + 0.43, + 5.60) at the point of implementation. There was a reduction in the mean energy content of menu options at each seasonal menu change (April 2022:-1.79 kcal, 95%CI:-3.42,-0.15; July 2022:-4.18 kcal, 95% CI:-7.65,-0.73). Conclusion This large observational study in worksite cafeterias found no evidence to indicate the introduction of calorie labelling led to any immediate reduction in energy purchased by customers. There was some evidence of increasing impact over time, possibly associated with changes in menu offerings, but this effect was small and cannot be directly attributed to calorie labelling.

Abstract Background Recent evidence shows the role of sirtuin 1(SIRT1), a family of evolutionarily conserved proteins, as a potential therapeutic target in the prevention and treatment of obesity and metabolic diseases. Some evidence shows the moderating effects of weight loss interventions on this factor. However, the findings are contradictory. In order to obtain a better viewpoint from them, this study aimed to comprehensively investigate the effects of weight loss interventions on SIRT 1 modulation. Methods For this study, we searched four electronic databases using predefined keywords from inception until March 2024. We includedrandomized controlled trials that evaluated the effect of weight reduction strategies on SIRT1 levels. The random-effects model analysis was used to obtain the pooled weighted mean difference (WMD) and 95% confidence intervals (95% CI). The meta-analysis was conducted using RevMan version 5.3 software and Stata version 12.0. Results Twelve studies with 627 volunteers were included. The pooled findings showed that weight loss interventions have no significant effect on the modulation of SIRT1 compared to the control group (pooled WMD of 0.58 ng/mL; 95% confidence interval [CI] -0.17 to 1.33; p = 0.130). However, subgroup analysis showed that weight loss interventions significantly modulate SIRT1 at metabolic disease (WMD: 1.2 ng/mL, 95% CI: 0.11 to 2.62, I2 = 82.9%). In addition, subgroup findings indicated health status and body mass index (BMI) as sources of high and potential heterogeneity. Conclusions Based on the findings, weight loss therapies in individuals having a metabolic disorder appear to generate a considerable increase in SIRT1 levels.

Abstract Background A food environment intervention using nudge tactics was implemented at a hospital convenience store (CVS) in Tokyo to improve employees’ eating habits. The objective of this study was to evaluate its effects on the urinary sodium-to-potassium ratio (Na/K), food intake, eating attitude, and behavior. Methods Using a pre–post design; the intervention incorporated nudge tactics, healthier options, easy-to-pick food placement, and eye-catching information. We also used price incentives. The primary outcomes included changes in Na/K and sodium and potassium excretion assessed using spot urine samples at health checkups. Secondary outcomes were changes in staff food intake, eating attitude, and behavior which were assessed using questionnaire surveys. All outcomes were evaluated statistically. Furthermore, we investigated how the intervention led to outcomes using path analysis. Results A total of 140 participant (52men and 88women) were analyzed. Significant changes were observed in Na/K (3.16 to 2.98 in median, p = 0.02) and potassium excretion (43.4 to 45.2 mmol/day in mean, p = 0.03). However, sodium excretion did not change significantly. The intake of fruits and dairy products increased with improved self-efficacy. The most influential factor for lowering Na/K and increasing potassium excretion was information from the CVS; purchasing “balanced meals” to lower Na/K and salads to increase potassium excretion were second. Conclusions Food environment intervention using nudge tactics can improve staff’s food intake and lower Na/K. Trial registration Registration number: UMIN000049444 (UMIN-CTR). Abstract Food waste is a significant issue worldwide, with developing countries like Zimbabwe facing unique challenges in managing household food waste. Life Cycle Assessment (LCA) is a tool that can help to understand the environmental impacts of food waste and identify opportunities for reduction. The aim of this review paper is to utilize the LCA approach to examine and analyze the environmental effects of food waste produced at household level in Zimbabwe. The study also attempts to offer insights on feasible methods and interventions that can be used in Zimbabwe to lessen household food waste and the effects it has on the environment. A systematic literature search was conducted using Science Direct, Google Scholar, Springer, African Journal Online, PubMed, Scopus and Sage Publications using key words for example life cycle assessment, food waste, household food waste, sustainability, waste management and environmental impact. The review includes 41 English articles published up to 2024. The references added up to 76 because some of the references were found inside the 41 articles used to compile the review. The review established that household food waste in Zimbabwe is a significant issue. The main causes of food waste include poverty, lack of access to markets and inadequate storage and transportation infrastructure. Life Cycle Assessment has been applied in Zimbabwe to assess the environmental impacts of food waste, with a focus on land, water and greenhouse gas emissions. As a result, relevant stakeholders and the government should give priority to implementing awareness campaigns and education programs to promote food preservation techniques, minimize food loss and encourage the adoption of home composting systems in order to improve Zimbabwe’s LCA of household food waste. The review emphasizes the importance of addressing the root causes of household food waste, such as inadequate infrastructure to reduce impacts of household food waste in Zimbabwe.

Abstract The study sought to find out consumers’ perceptions regarding the use of earthenware bowls and plastic bowls to serve hot foods in two most patronized food joints within the Sekondi-Takoradi Metropolis. The study adopted a descriptive survey design to gather data from consumers and operators of the selected food joints to assess knowledge of the chemical composition and potential health effects of plastic bowls used in serving foods and to determine the consumer preference to plastic or earthenware bowl. A non-probability sampling technique was purposefully used to select the respondents. A sample of thirty-two (32) respondents comprising thirty (30) consumers and two (2) operators were used for the study. The main data-gathering instruments used were interviews and observation. Data gathered had been analyzed to draw conclusions. The study revealed among others, that most of the customers had inadequate information about the potential health effects on eating from plastic bowls and the health benefits of using earthenware bowls. Based on these findings, it was recommended among others, that responsible authorities like Food and Drug Authority (FDA) should help the consumers to have a more profound knowledge concerning likely health implications of incessantly eating of hot foods in plastic bowls.

Abstract Underutilised legumes are important crop species whose cultivation and consumption are declining despite their medicinal and nutritional benefits. One of the most pressing global health concerns of the twenty-first century is diabetes, characterised by elevated blood sugar levels (hyperglycaemia). Food plays a huge role in the incidence and management of metabolic diseases such as diabetes. Hence, pharmacological research along the food-medicine continuum is being ignited by recent evidence linking diet to health and illness incidence. Herein, we determined in vitro the inhibitory effects of the gene bank-stored seed and freshly cultivated seed and leaf extracts of ten accessions of an underutilised legume (Macrotyloma geocarpum) on the enzymes involved in carbohydrate breakdown to glucose (α-amylase and α-glucosidase) as a strategy to reduce hyperglycaemia. The extracts of seed accessions obtained from the gene bank showed weakly α-amylase inhibition (IC50 range = 300–1000 µg/mL) while, extracts of the cultivated seed accessions generally showed enhanced inhibitory effects (IC50 range = 63–355 µg/mL), when compared to standard Acarbose® (IC50 = 64.23 ± 0.02 µg/mL). Freshly harvested seed accessions (72–616 µg/mL) were also observed to have enhanced inhibitory effects on α-glucosidase enzyme than the seeds from the gene bank (39–185 µg/mL) when compared to Acarbose® (73.23 ± 0.02 µg/mL). However, the leaf extracts of the cultivated accessions displayed significantly higher α–amylase inhibition (IC50 range = 54–61 µg/mL) than the cultivated seeds while a reversed case was observed in the α–glucosidase inhibition. Overall, this study suggests the medicinal importance of the underutilised M. geocarpum legume in the management of diabetes while considering the varying bioactive effects of the accessions as well as cultivation and storage.

Abstract Background Nutritional deficiency diseases are common in India and other developing countries. Recently, herbal nutraceutical products have diminished diseases related to nutrition and improper diet. The current study aimed to develop a powdered herbal nutraceutical using certain native edible plant parts from Tripura, India, and to assess its antidiabetic activity. Methods Plant parts were selected based on the ethnomedicinal information of healers. Nutraceutical powder was prepared by a simple mixing method using a double cone blender. Bulk density, tapped density, Hausner quotient, Carr’s compressibility index, flow rate, and angle of repose were determined to evaluate the nutraceutical powder. The proximate composition was determined by The Association of Official Analytical Collaboration (AOAC) methods. Essential minerals were determined using an atomic absorption spectrophotometer (AAS). Vitamins (vit-C, vit-B9, vit-A, and vit-E) were determined using HPLC. The anti-diabetic activity of the nutraceutical powder was evaluated by the Oral Glucose Tolerant (OGTT) test. Results All selected plants provided significant ethnomedicinal information. All physical parameters of the nutraceutical powder significantly matched the standard values. The formulated nutraceutical powder had a good caloric value (369 kcal), and a good amount of minerals and vitamins were found. Formulated nutraceutical powder shows significant antidiabetic activity. Conclusion Based on the results, it was concluded that formulated nutraceutical powder may minimize various malnutritional diseases and control the blood glucose label.

Abstract Millets are an important traditional food known for their dietary diversity. They play a key role in ensuring human health and well-being. Millets, which are small-seeded grains cultivated widely in various areas of the world, have emerged as significant contributors to this paradigm shift. They are nutrition powerhouses, that boast raised levels of dietary fibre, protein, vitamins, and minerals. Since they are gluten free, those with celiac disease may utilize them and serve as alternatives to wheat products. The promotion of these grains as a staple food holds significant promise for facing the global challenges of malnutrition, food insecurity, and environmental degradation. Moreover, millets contain bio-active compounds like flavonoids, lignin, phenolic acids reduce inflammation and serve as antioxidants. Millets have positive health benefits related to blood sugar, cardiovascular disease and obesity, and the gastrointestine. This article provides an overview of the functional role of millets as promising food for human health.

Abstract Amaranthus (Amaranthus cruentus) is an alternative food crop that requires fewer agronomic practices relative to other food crops. However, the yield of Amaranthus varies due to factors such as season, soil fertility, variety, and management practices. There is limited information available on certain agronomic practices for Amaranthus, such as harvesting frequency and N fertilizer application rates. The objective of this study was to determine the effects of nitrogen levels and harvesting frequencies on the growth, leaf and seed yield, and yield components of the Amaranth Madiira-2 cultivar at Jimma, under irrigation. The study used a randomized complete block design with a factorial arrangement of five N levels (0, 34.5, 69, 103.5, and 138) and three harvesting frequencies (weekly, every 2 weeks, and every 3 weeks), replicated three times. Abstract Background Locally cultivated crops play an important role in the food security. The biodiversity of these crops can be important for the livelihood of households in current and future generations. This research aims to study the socio-economic, agronomic, and ecological aspects which contribute to the maintenance of crop diversification and food security in the study area. Method Based on latitude and topography 10 villages were randomly selected, which was done in a study with 227 household farm managers. Food security was evaluated based on the species richness, and area under cultivation of food groups, and the probit logistic regression model was used for evaluation. Probit regression, also known as probit models, is used when the output or dependent variable of the model is bivariate. In inverse probit models, the standard normal distribution is modeled as a linear combination of predictor variables. In this situation, the application of normal regression methods is not applicable because the distribution occurred in two levels. In this study, it is assumed that the protection of biodiversity of local plants is related to food security, and for this reason, we have used this model. Results The findings showed that socio-economic status of different households and farms in this coastal area is one of the key factors affecting the biodiversity of locally cultivated crops. Local cultivars, especially those of rice, are resistant to most environmental factors and contribute to family food security. Food security and rice abundance are significantly correlated in all of the research area’s communities. Conclusions To ensure the sustainability, and health of production, and to ensure food security, planting various crops in this study area is recommended. Future research is needed to focus on solutions and technologies rich in diversity tailored to the socio-economic and environmental factors of locally cultivated crops.

Abstract Global demand for food is expected to nearly double by 2050. Alternative proteins (AP) have been proposed as a sustainable solution to provide food security as natural resources become more depleted. However, the growth and consumer intake of AP remains limited. This review aims to better understand the challenges and environmental impacts of four main AP categories: plant-based, insect-based, microbe-derived, and cultured meat and seafood. The environmental benefits of plant-based and insect-based proteins have been documented but the impacts of microbe-derived proteins and cultured meat have not been fully assessed. The development of alternative products with nutritional and sensory profiles similar to their conventional counterparts remains highly challenging. Furthermore, incomplete safety assessments and a lack of clear regulatory guidelines confuse the food industry and hamper progress. Much still needs to be done to fully support AP utilization within the context of supporting the drive to make the global food system sustainable.

Abstract For millennia, food systems worldwide have employed practices befitting a circular economy: recycling of agricultural and food waste or byproducts, environmentally sustainable production methods, and food preservation to reduce waste. Many modern-day agricultural practices may also contribute to a circular economy through the reuse of waste products and/or reducing agricultural inputs. There are, however, food safety impacts. This paper describes two sustainable agricultural practices that have unintended positive and negative impacts on food safety: alternative rice cultivation practices and no-till agriculture. We highlight how alternative rice cultivation practices have intended benefits of water conservation and economic savings, yet also unintended effects on food safety by reducing foodborne arsenic levels while increasing cadmium levels. No-till agriculture reduces soil erosion and repurposes crop residues, but can lead to increased foodborne mycotoxin levels. Trade-offs, future research, and policy recommendations are discussed as we explore the duality of sustainable agricultural practices and food safety.

Abstract Bioflavor and fermented foods in Indonesian cuisine were interesting for studying the relationship between fermentation products, microbial aspects, functional implications and biotechnological applications. The methodology employed in the literature review, including the sources used and inclusion criteria, demonstrates a meticulous approach to gathering and synthesizing information. Additionally, the factors influencing the perception of flavors on the tongue provide valuable insights into the complexities of taste perception, encompassing the role of specific amino acids and alkaloid compounds. The discussions on flavor production through microbial fermentation and the application of recombinant DNA technology in microbial flavor production showcase the strides made in biotechnology and their profound impact on flavor development. The escalating significance of natural ingredients and biocatalyst processes in producing flavor compounds aligns with consumer preferences for natural and sustainable options. Moreover, safety considerations for bioflavor products derived from biotechnology underscore the critical importance of ensuring consumer-friendly and safe products in this field. Functional bioflavor constraints provide practical considerations for developing and applying functional flavors, emphasizing the necessity for natural, safe and stable alternatives to conventional food additives. Overall, it offers a comprehensive and in-depth exploration of the multifaceted realm of flavor, integrating scientific, cultural and technological perspectives. It is an invaluable resource for researchers, industry professionals and enthusiasts engaged in flavor science and technology.

Indonesia retains a high stunting prevalence which varies between regions. The government preliminarily has specific and sensitive nutrition programs. However, few studies have investigated the prevalence of stunting in food-secure areas and its association with the nutrition program. Therefore, the current research aims to analyze the prevalence of stunting and its relationship with socioeconomic factors and nutritional intervention programs received by children or their families in food-secure areas. Methods: This cross-sectional study included 140 children under five and their parents/ caregivers. Chi-square and logistic regression were applied to examine the correlation of stunting prevalence with other variables. Results: The prevalence of stunting was 38.6%. The factors that were significantly correlated with stunting prevalence were maternal education level (P=0.01), household food expenditure in the animal-based foods group (P=0.009), ready-to-eat foods (P=0.002), total food expenditure (P=0.003), and information from health workers about the use of iodized salt (P=0.033). Conclusions: High stunting prevalence is present in food-secure areas. Therefore, increasing maternal education and improving household food access, particularly for animal protein and ready-to-eat food, can be potential strategies to reduce stunting problems in food-secure areas.
